Only 4 ingredients & 1 net carb in my Keto Chocolate Pecan Bark!!
Around the holidays, the sugary desserts are everywhere! This recipe came about one day I was almost tempted to have something that I knew I didn’t need. This Keto Chocolate Pecan Bark is so easy to make and only a few ingredients. The best part of this dessert is that it only has 1 NET CARB per piece!!!!
There are a variety of sugar free chocolate chips. Usually, I bake with Hershey’s Sugar Free Chocolate Chips and that is because that is what my local supermarket sells. Lilly’s Sugar Free chocolate Chips is another great option if your local supermarket has them in stock.
And, there may be other brands coming out soon. Some of the sugar free chocolate chips have aspartame and some have stevia, so it is just your preference on which ones that you add to your recipe.
Keto Chocolate Pecan Bark Ingredients (scroll down for printable version)
- 7 oz bag of Lily’s milk chocolate baking chips
- 1/2 tablespoon butter
- 1 cup chopped pecans
- 1/2 cup unsweetened coconut
This unsweetened coconut is a great add to keto desserts! It is crunchy not soft, so it gives crunch to any dessert. Also, you can toast the unsweetened coconut, which I do not toast mine, but it is an option. Just take a baking sheet and sprinkle a thin layer of unsweetened coconut on the pan and bake at 250 degrees for just a few minutes. Do not leave the oven, because it will only take a couple minutes for the coconut to brown.
1 Step – Gather Ingredients & Supplies (scroll down for printable version of recipe)
You will need a microwaveable glass bowl, spatula, cookie sheet and wax paper.
2 Step – Add chocolate chips and butter to a microwaveable glass bowl.
Place bowl into the microwave and cook for 30 seconds at a time, stirring between times until chocolate is completely melted.
3 Step – Place wax paper onto cookie sheet
4 Step – Pour melted chocolate onto the wax paper. With the spatula spread out the chocolate into an approx. 9×12 rectangle.
5 Step – Sprinkle chopped pecans onto the top of the melted chocolate
6 Step – Sprinkle unsweetened coconut onto the top of the pecans
7 Step – With your hands lightly press down the pecans and unsweetened coconut. This helps to keep the topping from falling off after the chocolate sets up and hardens.
8 Step – Place cookie sheet into the freezer for approximately 15 minutes
9 Step – After the chocolate hardens, cut up into 2×2 squares. This will make approximately 36 2×2 squares.
10 Step – Place into a freezer bag and store in the refrigerator or freezer.
