Who needs sweets in their life?!?!? I know you’re thinking, no, we don’t need sweets. BUT, this momma does for sure! And, the Keto or Low carb diet does not limit us to no desserts. We just have to use some substitutions. Which is exactly what I did for these Keto Chocolate Caramel Pecan Clusters
So, I wanted to share a new recipe which is my favorite! What can I say, but this sweet treat is DELICIOUS!! It’s Keto, Low Carb, Sugar Free, Gluten Free and a great treat for Diabetics! PLUS, it’s EASY, only 6 ingredients and less than 20 minutes to prepare!! It is Keto Chocolate Caramel Pecan Clusters.
What can be better than Chocolate and Caramel together? Only if it’s Keto too and less than 1 NET CARB EACH! That’s the only way it could be better and it is.
Keto Chocolate Caramel Pecan Clusters Sugar Substitutues:
I chose a sugar substitute called Pyure, it is a Stevia blend and has the texture of real sugar.
Other sugar substitute will work, for example;
- Truvia
- Swerve
- Splenda.
- Erythritol
- Monkfruit
- Stevia
- Sweet n Low
The sugar substitute that is above is a granular texture. So, choose a substitute that is granular and not confectioners. A confectioners might work, but I have not tested it with this recipe.
If you would like to try the confectioner, then you could cut the recipe in half and try it. It possibly could work and taste great. Also, I know that there are liquid sugar substitutes and you could also try those and see how they turn out.
If in the future I’ll try a different sweetener, then I’ll come back and add my results to this post.
Sugar Free Chocolate Chips:
And, as regarding the sugar free chocolate chips, there are a variety of sugar free chocolate chips. Usually, I bake with Hershey’s Sugar Free Chocolate Chips and that is because that is what my local supermarket sells. Lilly’s Sugar Free chocolate Chips is another great option if your local supermarket has them in stock.
And, there may be other brands coming out soon. Some of the sugar free chocolate chips have aspartame and some have stevia, so it is just your preference on which ones that you add to your recipe.
Keto Chocolate Caramel Pecan Cluster Ingredients:
- Butter
- Heavy whipping cream
- vanilla
- Pyure granular
- Pecans
Chocolate Drizzle Ingredients:
- Sugar free chocolate chips
- Coconut oil
Also, I do purchase my butter and heavy whipping cream at Aldi supermarket. The Pyure that I purchase is from Wal-mart and also the sugar free chocolate chips.
Other Ingredients That Could Be Added To The Keto Chocolate Caramel Pecan Clusters:
- almonds
- walnuts
- pecans
- peanuts
- hazel nuts
- brazil nuts
- macadamia nuts
- pumpkin seeds
- sunflower seeds
- unsweetened coconut
- chocolate chips: chocolate, butterscotch, sea salted caramel, mint chocolate chip, vanilla

- Over medium heat add the butter to a sauce pan and cook until brown, constantly stirring. This step takes approximately 3-4 minutes.
- Once the butter is brown, add the heavy whipping cream and stir
- Then add the Pyure and vanilla and cook over medium for approximately 3 minutes constantly stirring
- Remove from heat and add pecans to butter mixture and stir well
- Place wax paper onto a cookie sheet
- Scoop out by the tablespoon onto the wax paper
- Place the cookie sheet into the freezer for approximately 10 minutes
- Melt the sugar free chocolate chips and coconut oil in the microwave for 1 minute
- Drizzle chocolate over each cluster and place back into the freezer for 5 minutes
- Then, place into an air tight container and place into the refrigerator or freezer.
Equipment Needed:
- Medium size sauce pan
- whisk
- measuring cups and measuring spoons
- spatula
- wax paper
- cookie sheet
- small microwaveable bowl
Cooking Tips:
- Have the sugar, vanilla and heavy whipping cream already measured and ready to add to the butter once the butter is brown.
- Be sure to constantly stir butter to keep from burning.
- Also, constantly stir after sugar, vanilla and heavy whipping cream have been added to the butter.
- Don’t get in a hurry and keep the burner on medium heat and be patient because this step will cook at least 3 minutes.
- When spooning the clusters out of the pan, take a spatula a scrap out all the caramel sauce from the sauce pan. This will give you approximately a extra teaspoon of caramel sauce.
Storage Tips:
- The Clusters need to be placed into an air tight container.
- Then placed into the refrigerator or freezer, because they will melt at room temperature.
- They will last approximately 3 months in the freezer.

Keto Chocolate Caramel Pecan Clusters
Do you need a Keto, Low Carb, Sugar Free Dessert that is delicious and will satisfy everyone? Try these Chocolate Caramel Pecan Clusters
Ingredients
- 4 Tbsp Butter
- 1/4 cup heavy whipping cream
- 1 tsp vanilla extract
- 1 Tbsp Pyure granular
- 1 cup chopped pecans
Chocolate Drizzle
- 2 Tbsp sugar free chocolate chips
- 1/2 tsp coconut oil
Instructions
Clusters
- Over medium heat add the butter to a sauce pan and cook until brown, constantly stirring with a whisk. This step takes approx. 3-4 minutes.
- Once the butter is brown, add the heavy whipping cream and stir.
- Then, add the Pyure and vanilla and cook over medium heat for approximately 3 minutes constantly stirring
- Remove from heat and add pecans to butter mixture and stir well. I've done this step or I've added the pecans and stirred then taken off the heat. Either way will work.
- Place wax paper onto a cookie sheet
- Scoop out clusters by the tablespoon onto the wax paper
- Place the cookie sheet into the freezer for approximately 10 minutes.
Chocolate Drizzle
- Melt the sugar free chocolate chips and coconut oil in the microwave for 1 minute
- Drizzle chocolate over each cluster and place cookie sheet back into the freezer for 5 minutes
- Then, place clusters into an air tight container and place into the refrigerator or freezer.
Notes
Makes 8-10 clusters and each cluster has less than 1 net carb and 140 calories each.
