Southwest Egg Rolls with Avocado Ranch Dip

My family LOVES anything in fried egg roll wrappers! Lol, and I do too! This recipe is not only easy, but it is delicious.

These egg rolls can be baked in an air fryer, oven or fried in a deep fryer. You choose how you want to cook them.

Plus, if you don’t like one of the ingredients, then just leave it out. For example, I don’t love black beans, so I may leave them out the next time that I make them. Recipes are a guide.

This recipe has only a couple simple ingredients that can be purchased at your local grocery store.

Egg Roll Ingredients

  • chicken
  • black beans
  • corn
  • diced tomatoes with green chilies
  • shredded cheese
  • egg roll wrappers

Avocado Ranch Dip Ingredients

  • sour cream
  • mayo
  • avocado or a guacamole cup
  • ranch dressing mix
  • lime juice cilantro

How do I make Southwest Egg Rolls with Avocado Ranch Dip? (scroll down for the printable recipe card)

  1. Take a large bowl, add the drained cans of chicken and with a fork shred the chicken.
  2. Drain the cans of diced tomatoes with green chilies and corn, add to the bowl of chicken.
  3. Drain and rinse the can of black beans, add them to the bowl.
  4. Add the shredded cheese and mix well.
  5. Take a small bowl of water to help prepare the egg rolls.
  6. Take one egg roll wrapper and add approximately 2 tablespoons of the chicken mixture.
  7. With your finger dab it into the water and place it onto the edges of the entire egg roll wrapper.
  8. Fold up the bottom, roll half way, fold the sides and continue to roll. The water will help the egg roll wrapper stick. (Watch the video for more help)
  9. Air fry egg rolls at 350 degrees f for 5-7 minutes on each side, depending on how dark that you want the egg rolls. Optional idea is to spray each side with a non stick cooking spray.
  10. Another option is to bake at 350 degrees f until brown and crispy.
  11. Deep frying is also an option.
  12. To make the avocado ranch dip, take a small bowl add the sour cream, mayo, avocado, ranch dressing mix, lime juice, and chopped cilantro. Mix well.
Yield: 10-12 egg rolls
