Easy Pistachio Muffins

This is an AMAZING recipe!  The simple ingredient list makes it so easy to prepare and I love that I can find all the ingredients at my local supermarket.

This recipe has only a couple simple ingredients that can be purchased at your local grocery store. 

  • butter
  • sugar
  • egg
  • almond extract
  • Pistachio instant pudding and pie filling mix
  • baking powder
  • salt
  • milk
  • all purpose flour

How do I make Easy Pistachio Muffins? (scroll down for the printable recipe card)

  • Preheat oven to 400 degree f.
  • Melt butter in a microwaveable bowl
  • Add melted butter and sugar to a large bowl
  • Using a hand mixer mix the butter and sugar together
  • Add an egg and the almond extract and mix together
  • Add the box of pistachio instant pudding and pie filling, baking powder, salt
  • Mix with a spoon or spatula
  • Add the milk and all purpose flour and combine with the spoon
  • Spray the muffin pan with a nonstick cooking spray
  • Spoon muffin mixture into the muffin pan
  • Bake for approximately 15-20 minutes until a toothpick comes out clean
  • Remove muffins from the oven
  • Brush or spray on some butter and sprinkle the muffin tops with sugar
  • Enjoy!

Ingredients

  • 1/2 cup or 1 stick of butter
  • 3/4 cup of sugar
  • 1 egg
  • 1 tsp almond extract
  • 1 box (3.4 oz) pistachio instant pudding and pie filling
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk or more if batter is too thick
  • 1 3/4 cup all purpose flour

Instructions

  1. Preheat oven to 400 degree f.
  2. Melt butter in a microwaveable bowl
  3. Add melted butter and sugar to a large bowl
  4. Using a hand mixer mix the butter and sugar together
  5. Add an egg and the almond extract and mix together
  6. Add the box of pistachio instant pudding and pie filling, baking powder, salt
  7. Mix with a spoon or spatula
  8. Add the milk and all purpose flour and combine with the spoon

How to store leftover pistachio muffins?

Once the pistachio muffins have cooled place them into an airtight container or in a Zip-loc bag. Muffins can also be frozen for up to 3 months in the freezer.
