This recipe has only a couple simple ingredients that can be purchased at your local grocery store.
- butter
- sugar
- egg
- almond extract
- Pistachio instant pudding and pie filling mix
- baking powder
- salt
- milk
- all purpose flour


How do I make Easy Pistachio Muffins? (scroll down for the printable recipe card)
- Preheat oven to 400 degree f.
- Melt butter in a microwaveable bowl
- Add melted butter and sugar to a large bowl
- Using a hand mixer mix the butter and sugar together
- Add an egg and the almond extract and mix together
- Add the box of pistachio instant pudding and pie filling, baking powder, salt
- Mix with a spoon or spatula
- Add the milk and all purpose flour and combine with the spoon
- Spray the muffin pan with a nonstick cooking spray
- Spoon muffin mixture into the muffin pan
- Bake for approximately 15-20 minutes until a toothpick comes out clean
- Remove muffins from the oven
- Brush or spray on some butter and sprinkle the muffin tops with sugar
- Enjoy!

- 1/2 cup or 1 stick of butter
- 3/4 cup of sugar

- 1 box (3.4 oz) pistachio instant pudding and pie filling
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk or more if batter is too thick
- 1 3/4 cup all purpose flour
Instructions

How to store leftover pistachio muffins?
Once the pistachio muffins have cooled place them into an airtight container or in a Zip-loc bag. Muffins can also be frozen for up to 3 months in the freezer.
