Pies and cakes oh my! I love to bake and cook for my family. I remember as a little girl that my dad’s mother, who we called “Maw” baked pies all the time. She would bake them for her church, plus she would bake them to sell. Anytime that I would go to her house she would have empty pie crusts setting on her kitchen table awaiting for the filling to be poured in. She would tease me, because I just wanted to eat the pie crust that she had made. But, Maw could make the best pie crust from scratch. She spent the majority of her time in her kitchen cooking and baking.
Maw’s Famous Chocolate Fried Pies
I have a lot of her recipes, she was FAMOUS for her CHOCOLATE FRIED PIES. And, what is funny is these pies were baked and not fried and I never thought much about that. I wished that I would have asked her why she called them FRIED PIES when they were baked in the oven. I didn’t think about this until years after she had died. She would take her crust made from scratch, divide it up, roll into small circles and make a chocolate pie filling, you know the old fashion kind with cocoa, sugar, cream and butter. Then, she would fill the crust and fold over into a half moon and bake. OH MY! They were heavenly! I have never been able to make them like she did, but maybe with practice I can hope to one day be half the baker that she was. š I thank the Lord for good memories like these and hopefully, I can pass some of these precious memories down to my children and grandchildren.
Change Up This Pie Filling!
This pie came about as I was making some keto or low carb pies. I had made this pie with keto sweeteners and an almond flour crusts. The base of this filling can be changed in so many ways. I had added peanut butter and made Keto Peanut butter Pie Cupcakes. Keto Mint chocolate chip cupcakes by adding mint extract to this filling. Also, I made a Keto Cherry Pie by making this pie filling and adding a can of sugar free cherry pie filling to the top of the pie. And, another pie that I made was I took this pie filling and added peppermint extract to it then sprinkled crushed peppermints on top. So, this same pie filling can be changed so many ways. If you don’t like the pecans just leave them off and add strawberries or blueberries. The options are endless to this pie filling recipe.
However, if you need an easy holiday pie recipe this maple pecan cream pie is it! This recipe is easy to follow and is a no bake pie except for the crust. And, I love no bake pie recipes. To me cold pies are the best, don’t get me wrong a warm chocolate pie just out of the oven is divine, but a chilled or almost frozen pie is delicious too! This pie is sooooo good partially frozen! When I made this pie I cut it up into slices and froze them. Then, when I want to eat a slice I will take it out of the freezer and within 15 minutes is slightly soft enough to eat! YUMMO!!
Maple Pecan Cream Pie Ingredients:
- cream cheese
- confectioners sugar or sugar substitute for those who need sugar free
- heavy whipping cream
- sugar or sugar substitute for those who need sugar free
- pecans
- maple & almond extract
- ready made pie crust
Maple Pecan Cream Pie Instructions (scroll down for printable version)
Crust
- Bake ready made pie crust as directed
Pie Filling
- Add softened cream cheese to a medium size bowl
- Using a mixer, beat cream cheese until fluffy
- Gradually add confectioners and mix well with mixer
- Set aside and make the whipped topping recipe below, which will then be combined into this mixture.
Whipped Topping
- Pour heavy whipping cream into a medium bowl
- Add sugar and extracts
- With a mixer, beat cream until peaks form
- Take the above pie filling recipe (cream cheese mixture) and this whipped topping and beat together until combined
- Add 1/2 of the Pecans and mix well.
- Pour into the cooled crust
- Sprinkle the top with pecans.
- Place pie into the refrigerator and chill for at least 2 hours, overnight would be even better, because this pie is so much better chilled or partially frozen.
Tips!
- pie can be frozen and thawed to serve at a later time, just slice up the pie and freeze
- for those with nut allergies just skip the pecans and you still have a delicious pie
- use this same pie filling recipe and add different extracts
- extracts: peppermint, banana, cherry, lemon, root beer, orange, etc….
- leave off the nuts and add strawberries or blueberries
- leave off the nuts and add a can of cherry pie filling to the top of the pie
- leave off the nuts and add crushed peppermint candies to the top of the pie
- add chocolate and caramel sauces to the top of the pie and you will have a turtle pie
- skip the crust and serve up in muffin tins for individual servings ( I have done this for portion control, but I pour the pie filling up in mini tins and freeze them)

Maple Pecan Cream Pie
Here's an easy & delicious pie recipe.
Ingredients
Pie Filling
- 8 oz cream cheese
- 3/4 cup confectioners sugar
Whipped Topping
- 16 oz heavy whipping cream
- 2 tbsp sugar
- 1/2 tsp maple extract
- 1/4 tsp almond extract
- 2 cups of pecans
- Premade Pie Crust
Instructions
- Bake ready made pie crust as directed and set aside to cool.
Pie Filling:
- Add softened cream cheese to a medium size bowl
- Using a mixer, beat cream cheese until fluffy
- Gradually add confectioners and mix well with mixer
- Set this mixture aside and make the whipped topping.
Whipped Topping:
- Pour heavy whipping cream, sugar and extracts into a medium bowl
- With a mixer, beat cream until peaks form
- Take the above pie filling and this whipped topping and beat together until combined
- Fold in 1 cup of pecans
- Pour into a cooled crust
- Sprinkle 1 cup of pecans on top of pie
- Chill in refrigerator and serve
