This super easy 2 ingredient Spanish Rice recipe will be a great side dish to go with all of your favorite Mexican Meals!
I mean, who needs a easy, quick, 2 ingredient side dish??? I know that I do!
Who says that simple dishes can’t be packed full of flavor??? I’m sure that I have y’all wondering, “how is she going to make spanish rice with just 2 ingredients?!” Well, I’ll just show you how.
Super Easy 2 Ingredient Spanish Rice Recipe
Of course, your 1st ingredient will be rice. But the second ingredient is something that probably most people have in their refrigerator right now. Pace Salsa……Did you guess that one?
I used the chunky Salsa because that’s what I had on hand but it actually worked out best that way so you could have chunks of tomato and peppers in your rice.
Another great thing about this side dish is that it is very inexpensive to make. Prepared to the recipe below, it makes 4 servings. I done the math and each serving costs $0.23.
The 1 cup rice cost $0.34 and the Pace cost $0.57. We do buy the big 64 oz jars of Pace because we are a family of 6 and the little 16 or 12 oz jars would be gone overnight, lol. That may cause the Pace to be a little cheaper by buying it in bulk.
You could even use an off brand salsa and it would probably come out even cheaper per serving, but my Dad doesn’t really like any other salsa than Pace, so that’s what we keep around here.
Rice is rice and the off brand is always usually cheaper than the name brand and you won’t know the difference when it’s cooked anyway, lol.
This would make a great side dish to take to a big gathering that won’t break the bank. And, it doesn’t take forever to prepare.
We live out in the country a few miles from town, so I try to always have on hand a lot of staples in my pantry. For example, the following for this recipe and some other great ideas of staples to have on hand:
Essential Pantry Staples:
- Can chicken breast
- Cream of mushroom soup
- Cream of chicken soup
- Cream of celery soup
- Chicken broth
- Beef broth
- Canned black olives
- Green chili enchilada sauce
- Green chilis
- Red enchilada sauce
- Canned beans
- Canned corn
- Tomato sauce
- Diced tomatoes
- Spaghetti noodles
- Elbow noodles
- Various pasta noodles
- Tortilla chips
- Pasta sauces
- Block cheese like Velveeta or an off brand type
- Flour and corn meal
Refrigerated Essential Items:
- Shredded cheeses, blocks of cheeses and sliced cheese
- Cream Cheese
- Diced garlic
- Lunch meats, weiners and sausages
- lettuce, tomatoes and onions
- Corn tortillas
- Flour Tortillas
Freezer Essential Items:
- Hamburger meat
- Chicken breast, legs & thighs
- Breakfast sausage by the lb and breakfast sausage patties
- Extra breads, loaf and buns
- Extra weiners and lunch meat
- Frozen vegetables
- Frozen berries

All you have to do is cook your rice to the directions on the bag.
Once done, simply mix in your Pace salsa and serve.
- 3 C Rice ( cooked to the instructions on the bag, 1 C uncooked)
- 3/4 C Pace Salsa (chunky)
- Cook your rice to the directions on the package
- Add the Pace and mix well.
