Keto Maple Pecan Cream Pie

If you need an easy holiday pie recipe this keto maple pecan cream pie is it! This recipe is easy to follow and is a no bake pie except for the crust. The maple and almond extracts in this pie are so delicious! I love extracts! This filling recipe can be made with any extract and leave off the pecans. Here are some examples:

Add mint extract and SF chocolate chips = Mint chocolate chip pie

Add peppermint extract and crushed SF peppermints = Peppermint pie

Add sugar free peanut butter = Peanut butter Pie

Add to the top of the pie a can of SF cherry pie filling = Cherry Pie

In this recipe I do use 2 different kinds of sweeteners. These are 2 that I have become familiar with and so you are more than welcome to use whatever sweetener that you would like. The heavy whipping cream is mixed with a granular sweetener called Pyure

The cream cheese mixture is combined with a Swerve Confectioners, both of these I purchase as my local Wal-Mart.

The two sweeteners are the mostly costly ingredient in this recipe. But, they both make this Pie very delicious and keep the recipe sugar free and low carb. The heavy whipping cream and the cream cheese I purchase at Aldi, they have the cheapest price on these 2 items.

Usually, the cream cheese is only $0.79 each and the heavy whipping cream is $1.55, both cheaper than the other local supermarkets in my town.

What is the Keto Diet?

The ketogenic diet focuses on high fat, low carb foods like eggs, meats, dairy, and low carb vegetables. Also, it consists of food that are sugar free and gluten free. A lot of individuals believe it is just a lot of protein, like a lot of bacon, but it is more than just eating a lot of bacon. It is limiting carb consumption to around 20 to 50 grams per day and filling up on fats, such as meat, fish, eggs, nuts, and healthy oils.

Keto Maple Pecan Cream Pie Instructions (scroll down for printable version)

Crust

  • Preheat oven to 350 degrees
  • In a medium bowl, combine melted butter, almond flour, salt and sweetener, mix well
  • Press mixture into an oven safe 9 inch pie pan that has been sprayed with oil very well
  • With a fork poke holes into the crust
  • Bake for approx. 6-12 minutes
  • Set crust aside to Cool

Pie Filling

  1. Add softened cream cheese to a medium size bowl
  2. Using a mixer, beat cream cheese until fluffy
  3. Gradually add Swerve confectioners and mix well with mixer
  4. Set aside and make the whipped topping recipe below, which will then be combined into this mixture.

Whipped Topping

  1. Pour heavy whipping cream into a medium bowl
  2. Add sweetener and extracts
  3. With a mixer, beat cream until peaks form
  4. Take the above pie filling recipe (cream cheese mixture) and this whipped topping and beat together until combined
  5. Add 1/2 of the Pecans and mix well.
  6. Pour into the cooled crust
  7. Sprinkle the top with pecans.

Ingredients

Pie Filling

  • 8 oz cream cheese
  • 3/4 cup swerve Confectioners sugar

Whipped Topping

  • 16 oz heavy whipping cream
  • 2 tbsp Pyure sweetener
  • 1/2 tsp maple extract
  • 1/4 tsp almond extract
  • 2 cups of pecans

Crust

  • 2 1/2 cups almond flour
  • 1 tbsp sweetener (granular like Pyure)
  • 1/4 tsp salt
  • 1/4cup + 2 Tbsp melted butter

Instructions

Crust:

  1. Preheat oven to 350 degrees
  2. In a medium bowl, combine melted butter, almond flour, salt and sweetener, mix well
  3. Press mixture into an oven safe 9 inch pie pan that has been sprayed with oil very well
  4. Using a fork poke holes into the crust

    3. Take the above pie filling and this whipped topping and beat together until combined
    4. Fold in 1 cup of pecans
    5. Pour into a cooled crust
    6. Sprinkle 1 cup of pecans on top of pie
    7. Chill in refrigerator and serve

Tips!

  • Cut this pie up into slices and freeze. I have froze these pies many times and they will thaw perfectly.
  • Choose a different topping. If you are not crazy about pecans then choose a different nut or add strawberries, blueberries, blackberries or a can of sugar free cherry pie filling. I like to cut up strawberries, place the strawberries in a bowl with some sweetener, like Pyure granular and set in the refrigerator for a couple of hours. Then, pour the strawberries and juice over this pie. This is so good!
  • Take this recipe and instead of making a pie – spoon this filling into cupcake tins. I have done this and I leave out the crust. I like to make mini cupcakes using those mini cupcake tins and then I’ll freeze them and I have a lot of mini desserts to always have on hand when I want something sweet.
