As a stay at home AND homeschooling mom, I cook A LOT of meals. We love French toast, BUT to make French toast for 4 kids and 2 adults takes A LOT of time, BUT ONCE I made a French Toast Casserole I will NEVER go back to the French toast, LOL. I LOVE this recipe and my kids will never know that it is keto. For their individual servings, I can simply drizzle Maple syrup over their French toast casserole and a sugar free pancake syrup for mine.
You simply toss all the ingredients into a baking dish and bake! What an easy breakfast dish!
What Is A French Toast Casserole?
The definition of french toast is an egg mixture and milk mixture poured over bread and fried in a skillet or baked in the oven. But, a French Toast Casserole is a ONE PAN MEAL!
What Type of Bread is Best For French Toast?
A stale bread (leftover bread) or white bread is the best bread for French toast. However, for a KETO or low carb version of this casserole, you will need KETO bread. Your local supermarkets have a variety of Ketogenic or low carbohydrate breads to choose from.
What Are the Ingredients in a Classic French Toast Recipe? And, the Keto French Toast Casserole Ingredients.
- french bread exchanged with KETO bread
- butter.
- brown sugar exchanged with a Splenda or Swerve brown sugar
- eggs, a breakfast staple that every kitchen will need.
- milk exchanged with almond milk
- vanilla extract (optional)
- cinnamon.
- Granular sweetener. My favorite is Pyure Stevia Granular
- powdered sugar exchanged with Swerve Confectioners sugar (optional glaze)
- Pecans

- Preheat the oven to 400 degrees
- Cube the bread into 1 inch slices
- Spray baking dish with oil
- Layer the bread in the baking dish
- In a bowl, add almond milk, eggs, cinnamon and sweetener and whisk with a fork
- Pour egg milk mixture over the cubed slices of bread
- To prepare the crumble on top. Melt the butter, then add the brown sugar substitute and pecans to the melted butter
- Crumble this mixture with you hands over the bread layer
- Bake uncovered for approximately 35 minutes
- Optional: drizzle French Toast Casserole with SF pancake syrup or a powdered sugar substitute glaze
- Serve with bacon, sausage or egg muffins
Is French Toast Keto or Is French Toast Casserole Keto?
Not typically, but I have created a Keto version of a French Toast Casserole. I have exchanged a few of the regular French toast ingredients and created the best ever Keto French Toast Casserole.
French Toast Casserole Side Dishes
1.Fresh Fruit, Fruit Salad or Yogurt
- Fresh Berries
- Fresh strawberries, blueberries, or blackberries
- Berry mix
Add some whipped topping to your fruit by taking heavy cream and beating it with a mixer until peaks are formed.
2.Sausage Links or Sausage Patties
Sausage is a must have in my kitchen freezer. My kids want me to cook sausage every morning
3.Bacon
My household also loves bacon! An excellent way to cook bacon is in the OVEN! For years I would cook bacon in a skillet on top of the stove, but one day I decided to try cooking my bacon in the oven and I LOVE it. I take a baking sheet and cover it in 2 layers of foil, this is very important, because this saves A LOT of time cleaning up. Plus, be sure to save your bacon grease. After the grease has cooled pour it up into a jar and place into the refrigerator. Add bacon grease to green beans.
4.Breakfast Ham or Canadian Bacon

Keto French Toast Casserole: Easy-One Dish Meal
If you need an easy and quick KETO breakfast casserole, this Keto French Toast Casserole is it.
Ingredients
- 6 cups of cubed Keto bread
- 3 eggs
- 1 cup almond milk
- 1 Tbsp Pyure or sugar substitute
- 1 tsp Cinnamon
Topping
- 1 stick of melted butter
- 1/2 cup Swerve brown sugar
- 1/2 cup chopped pecans
Optional Glaze
- 1 cup Swerve Confectioners sugar
- 2 Tbsp water
Instructions
- Preheat the oven to 400 degrees

My Favorite French Toast Recipes Are Easy
- Take 2 Keto bread slices
- In a medium bowl add these simple ingredients:
- 1 egg
- 1/4 cup of almond milk
- 1/4 teaspoon of cinnamon
- 1/4 teaspoon of sugar substitute (optional)
3.In a medium size skillet add a tablespoon of butter over medium heat
4.Place bread slice into mixture
5.Place soaked bread slice into the pan and cook on both sides until done.
French toast or a french toast casserole is a delicious dish to serve your family any time of the day or for a Sunday brunch. This casserole is also perfect for Mother’s Day or for a Christmas brunch. However, the french toast casserole is the perfect breakfast casserole to serve, plus it is even better the next day. Just take take plastic wrap, cover your baking dish and refrigerate until the breakfast meal.
