These keto cheesy ranch chicken taquitos are so quick and easy to make. Most of us always have cheese and chicken on hand, especially those of us who are on the ketogenic or low carb diet. Plus, those who are diabetics and need a sugar free or gluten free diet. For this recipe, I tried 3 different types of cheese, but the options are endless, because our supermarkets have such a variety of cheeses. Plus, protein or meats, the options are endless too!
I love pepper jack cheese, so I assumed that the taquitos made from that cheese would be my favorite, BUT I found out that the taquitos made from the monterey jack cheese cooked better. In other words, LOL, it got crunchier and I like the crispy, crunchy taste of the cheese. But, I am also that person who likes their bacon REALLY done (almost black) and biscuits really brown, keto biscuits of course!
These little taquitos would make excellent party appetizers for your next party or event. They are small enough for just a couple bites and the filling could be changed to your favorite keto meat, for example BACON and cheese. I have not tried the bacon, but it would be delicious. Bacon and keto go hand in hand, right?!?!

Types of Cheese for Cheesy Ranch Chicken Taquitos
Any sliced cheese will work, I chose 3 types; pepper jack, mozzarella and monterey jack cheeses

Seasonings
In this recipe, I used garlic powder and dill seasonings for a ranch flavor. And, the reason by these choices are, because I make and sell keto meals. And, one of my meals, that is the most popular is my “Chicken Ranch Taquitos”, but these are made with low carb tortillas. I add this same filling of shredded chicken breast, cream cheese, shredded cheese, garlic powder and dill seasonings to a low carb tortilla. Then, I roll up the taquitos, brush oil on the outside and bake in the oven until the tortillas are brown. These are so good, but not all keto individuals eat low carb tortillas, so I created this recipe of the cheesy taquitos. But, these seasonings are optional and you could use just salt and pepper or any of your favorite seasonings.

- Red Pepper (ground)
- Black Pepper
- Crushed Red Pepper Flakes
- Paprika
- Sea Salt
- Garlic Powder
- Onion Powder
- Parsley
- Oregano

- Rosemary

- Marjoram
- Sage
- Cumin
Step 1 – Gather your supplies & preheat oven to 400 degrees
You will need a baking sheet, parchment paper or foil and a bowl for mixing up the taquito filling in.
Step 2 – Place drained can of chicken, cream cheese and seasonings into a mixing bowl
Mix well with a spoon or fork.
Next, Step 3 – Mix ingredients together
Step 4 – Place a sheet of parchment paper onto a cookie sheet. Take slices of cheese and place on parchment paper.
Step 5 – Place cookie sheet into a preheated oven of 400 degrees for approximately 6 minutes. Do not leave the oven, because the cheese bakes quickly.
Step 6 – Remove cookie sheet from the oven and begin adding the filling (1 tablespoon) to each slice of cheese while the cheese is still warm.
Add only 1 tablespoon to each slice of cheese
Next, Step 7 – After you have filled a slice of cheese fold it over and press down.
You can press around the edges with a fork to seal the edges. The edges will seal or melt together better once you place the pan back into the oven.
Step 8 – Place taquitos into oven for 2 more minutes and then enjoy!
Once you remove the baking sheet from the oven, take a spatula and remove the taquitos from the baking sheet and place each taquito onto some paper towels to help remove the excess oils from the cheese.
These are great snacks, especially keto or low carb snacks. My mom, who is a diabetic, can not have a lot of sugar or a lot of carbs (like breads) so this is a great snack for me to serve at birthday parties for those individuals who are keto or diabetics that don’t eat hot dogs, hamburgers and potato chips, which are the main menu at most birthday parties. I can serve these little taquitos with a keto or no sugar dip and they are sure to please a crowd!

Keto Cheesy Ranch Chicken Taquitos
These keto cheesy ranch chicken taquitos are so delicious and each to make. Only a few ingredients and a few minutes in the oven you are ready for a delicious snack or meal.
Ingredients
- 18 slices of your favorite cheese
- 1 can of drained chicken breast (12.5oz)
- 1 package of cream cheese
- 1/2 tsp garlic powder
- 1/2 tsp dill
Instructions
- Add drained can of chicken, cream cheese and seasonings to a bowl.
- Mix ingredients well
- Place a sheet of parchment paper on to a cookie sheet and preheat over to 400 degrees
- Place slices of cheese onto the cookie sheet and bake approximately 6 minutes. DO NOT leave the oven, because the cheese bakes quickly.
- Remove cookie sheet from oven and fill each slice of cheese with 1 tablespoon of filling. Do this step while the cheese is still warm from the oven.
- Fold over the warm slice of cheese and press down
- Return to oven for 2 minutes and remove
- Enjoy!
