Who loves easy & quick meals??? This little momma sure does! With a family of 6, homeschooling, running a farm and online businesses, I need all the quick recipes that I can find. And, this Keto Sausage & Cabbage Casserole is great with only 3 ingredients with a little oil and salt/pepper. Plus, it is a one skillet meal. So, the clean up is rather simple too.
Keto Sausage & Cabbage Casserole – 3 Simple Ingredients
- Cabbage
- Summer Sausage
- Onion
I begin by warming a little oil in a large skillet. Any oil that you prefer could be used in this recipe. However, I like the taste of olive oil. Another oil that would be good is avocado oil, both of these oils would be delicious in this recipe. Coconut Oil is the only oil I find that doesn’t work to heat to high, so I would not suggest it. But, there are plenty of other options to choose from at your local supermarket.
After warming the oil, I like to add my onion. I love sauteed onion! So, I will saute my onion until it is golden brown. Now, some people like my husband do not like their onion “burnt” as he calls it, but I love them brown and sweet. I believe this brings out the sweet flavor in onions, especially yellow onions. After the onions are caramelized, I then add the cabbage and summer sausage. Then, I place a lid on top and let it all simmer until the cabbage is soft. Stirring ever so often to distribute the oil on all the cabbage.
This Keto Sausage & Cabbage Casserole has become one of my favorite keto recipes. Plus, it is not only keto and low carb, it’s fairly inexpensive. Aldi’s is my go to for all my veggies and their summer sausage was a good price too. So, for this recipe ALL of your ingredients could be bought at Aldi’s.
Another option in this recipe would be to leave out the onion. The onion in this recipe has the most carbs, but when used in small amounts for flavor the carbs would be low.
My girls like this dish a little on the sweet side, so an option is too add a sweetener, about 1 Tablespoon or to taste. They use sugar, but a sugar substitute would work great. My go to sugar substitute is Pyure granular.
Also, another idea is to replace the summer sausage with bacon, YUMMO!! Bacon would also lower the net carbs in this recipe for those Keto or low carb people. Y’all, use your imagination and get creative with this simple dish.

Keto Sausage & Cabbage Casserole
This is a quick & easy recipe to follow. A recipe that is Keto, Low Carb, Gluten Free and Diabetic Friendly
Ingredients
- 8 oz summer sausage
- 1/2 head cabbage
- 1/4 chopped onion
- 2 tbsp olive oil
- salt & pepper to taste
- 1 tbsp sweetener (optional)
Instructions
- Heat oil in a medium size skillet
- Add onions to oil and saute until translucent
- Add summer sausage and cabbage
- Add salt & pepper, and sweetener if desired
- Place a lid on top of pan and saute for approx. 20 minutes or until desired brownness. Be sure to stir often.
