Who could imagine that you could have Cinnamon Rolls with Icing on a diet? Not me! These Keto Cinnamon Rolls are Keto, Low Carb, Gluten free and sugar free. I was amazed of how good they tasted, especially to be sugar free.
This Keto Cinnamon Rolls recipe does take a little effort to mix up and roll out and then, roll back up, lol, but they are so worth the effort and time. Do Not become discouraged when rolling the dough, because it will work.
Take your time and if the dough separates while rolling back up to cut, just pinch it together and it will be fine. **Scroll down below the recipe and you’ll see detailed pictures. 🙂

Keto Cinnamon Rolls Ingredients:
- Mozzarella cheese
- cream cheese
- eggs
- almond flour
- baking powder
- baking soda
- optional: package of yeast for taste
- Inside mixture: butter (melted), Pyure sweetener, Cinnamon
- Frostint/Icing: Swerve Confectioners, water, vanilla
There are so many different sweeteners that you can choose from at your local supermarket. I have come to favor one called Pyure. Pyure comes in 2 forms granular and confectioners. The filling in this recipe calls for the Pyure granular and it has a consistency of sugar. Any sweetener of your choice can be used in this recipe. Here is a picture of the Pyure:
For the frosting/icing on the cinnamon rolls, I use Swerve Confectioners, water and vanilla. The water amount varies because it depends on how thick you would like the frosting. I would begin with a 1/4 tsp of water at a time, stir and add more has desired. You can not go wrong, if the frosting is too thin, then add more confectioners. If the frosting is too thick, then add more water. The brand of confectioners that I like is Swerve. However, I have tried different brands and some have an awful aftertaste, so it’s your preference of confectioners.

Keto Cinnamon Rolls

Ingredients
- 8 oz package of Mozzarella cheese
- 3 oz cream cheese
- 2 eggs
- 2.5 cups almond flour
- 3 tsp baking powder
- 2 tsp baking soda
- 1 package of yeast for taste (optional)
Cinnamon Roll Filling
- 3 tbsp butter melted
- 3 tbsp Pyure sweetener (granular or sweetener of your choice)
- 1 tsp cinnamon
Frosting/Icing
- 1/2 cup Swerve's Confectioners (or your choice of confectioners)
- water
- 1/4 tsp vanilla
Instructions
- Add Mozzarella cheese and cream cheese to a bowl and microwave until cheeses are melted. Stirring every 30 seconds until melted.
- Add eggs to cheese mixture and combine with a spoon.
- In a separate bowl, combine the dry ingredients of almond flour, baking powder, baking soda and yeast. Mix well.
- Combine the wet and dry ingredients and mix well with a spoon, may take a few minutes to mix.
- Place mixture on parchment paper and add another piece of parchment paper on top of mixture. Then, take a rolling pin and roll out to 1/4 inch think. It's better to be too thick than thin. Less than 1/4 inch and it'll stick to the paper and will not roll up (learned from experience, lol,)
- After dough is rolled out, removed top parchment paper and spoon over melted butter spreading with back of spoon, then sprinkle on Pyure sweetener and cinnamon. ( combine the
Pyure and cinnamon before adding to dough) - Begin to roll up the dough, don't get frustrated, lol, it takes a little time and with practice it becomes easier, trust me 🙂
- After the dough is rolled up, take a bread knife or a sharp knife and cut inch 1 inch slices and place in a greased pan.
- Cook at 400 degrees for approximately 15 minutes. While the rolls are in the pan, I usually take a fork and spread a roll apart to see how done it is.
- Set aside to cool.

Place Swerve Confectioners in a bowl and begin to add a 1/4 tsp. of water at atime until the glaze is the thickness you desire. I know the amount ofwater isn't specific, but you can't go wrong, if your glaze is too thick then add water, if it's too thin then add more Swerve Confectioners, it totally depends on if you want a thick spreadable glaze or a drizzle of glaze 🙂
