This is probably one of the easiest breakfast ideas! Egg muffins can be customized in so many ways. The options of adding different meats and vegetables are endless. The ones below are bacon & spinach.
If any of y’all have followed us for very long, then you have probably read that we live on a farm and have quite a few chickens. So, that means we usually always have plenty of eggs. Sometimes we have way more eggs than we can possibly eat, so any recipe that uses eggs, is a winner!
This is the second version of egg muffins that I have made, with the 1st being my Sausage & Egg Muffins. This time my dad, who is the main person that eats them, wanted me to add lots of vegetables and bacon.
My dad loves any green vegetables, so the more vegetables the better. I added spinach (one of my dad’s favorites) and mixed bell peppers & onions.

Tips –
I have a couple tips on these muffins, this first one is a time & money saver!
I used frozen mixed bell peppers and onions instead of fresh. My mom used to think buying the bag of frozen was a waste of money, but after she started thinking about it, it really did make more sense.
If you bought a couple bell peppers (which can sometimes be really expensive if you buy anything other than the green ones) and sliced them up, you would probably one use a small portion of what you cut up and then the rest will wind up being thrown out.
If you buy the bags of peppers and onions in the frozen section, you can just pull out what you need when you need it and not waste what you don’t. It’s a time saver too.
Of course, you could buy whole bell peppers and cut them up and freeze the extra. But, buying them frozen is easier and it’s really not any more expensive.
We’ve bought this brand before with the 3 colors of peppers, but we have also used the great value brand at Wal-Mart too.
Another great thing about these muffins is that you can bake them ahead of time and freeze or refrigerate them. They usually don’t last long enough around here to have to freeze them. You just pop them in the microwave for 30 seconds and done.
Also, make sure you spray your muffin pan and they will just pop right out.

Directions
These are pretty simple to make. Just cook your meat, in this case I used bacon. Once my bacon was done, I added my frozen peppers & onions to the same pan and cooked them in the bacon grease for added flavor
Then you just mix all the ingredients in a bowl and pour into a greased muffin pan
Bake on 350Ā° They will rise a good bit while they cook.
Bacon & Spinach Egg Muffins
These are such a quick and easy breakfast idea! You can use any veggies and customize them in so many ways!
Ingredients
- 12 Eggs
- 6 Slices Bacon
- 1 Tablespoon Bacon Grease
- 1 C Frozen Bell Peppers & Onions
- 2 Small Handfuls Baby Spinach
- 1/2 tsp Salt
- 1/2 tsp Pepper
Instructions
1. Chop bacon into bite sized pieces and cook, saving 1 T of bacon grease when finished.
2. Using the same pan as for your bacon, take your frozen peppers & onions and cook using the bacon grease.
3. Once your bacon and peppers are done, add all ingredients to a bowl and mix.
4. Spray your muffin pan and pour into pan about 2/3 full
5. Bake on 350° F for 20-25 minutes until the egg is cook all the way through.
