A “Poke Cake” is an easy dessert that is made from simple ingredients. Usually, they are made from a box of cake mix, pudding, pie filling, or a fruit filling. But, the name comes from the “poking” holes into the top of the cake, so that the syrups, jellos, puddings or fillings will soak down into the cake.

Can I poke too many holes in my Poke Cake?
Not really, I poke a lot of holes into my poke cakes. Usually, 1 inch apart or less.

- box of yellow cake mix

- devil’s food cake mix
- yellow cake mix
- any box of dry cake mix

- any canned pie filling

- white boxed cake mix (vegetable oil and egg whites) – follow the cake mix recipe instructions and be sure to use only egg whites, so that the cake will be white and not yellow
- box of cherry jello
- cans of cherry pie filling
- cool whip – leave out at room temperature
- optional red, white & blue sprinkles
- nonstick cooking spray

- large mixing bowl
- wooden spoon or spatula
How do you make a poke cake?
- The first step is to have a Preheated oven. Follow box cake mix instructions.
- Take a mixing bowl and mix up the box cake mix – be sure to add only egg whites, so that your cake will be white and not yellow
- Pour the wet ingredients into a sprayed cake pan – be sure cake batter is spread evenly in the pan
- Bake following the cake box instructions – until golden brown on top
- For best results, let the cake cool completely
- Take a straw or end of a wooden spoon and poke holes into the top of the cake
- Mix up the jello according to the package directions and pour ONLY HALF OF THE LIQUID JELLO onto the cake – take the extra jello, pour into a dish and place into the refrigerator for a snack later.
- Add the can of pie filling – I used 2 cans, but 1 can will work too, it depends on how much cherry filling that you would like to have on top of your cake
- On top of the pie filling add the cool whip and carefully spread around.
- Add optional sprinkles to the top of the cool whip
- For the perfect dessert serve ice cold! YUMMY!
- Also, a scoop of ice cream on the side is the best part.

This is the easiest poke cake ever! With only 4 ingredients and your choice of sprinkles to match any Holiday or occasion.
Ingredients
- 1 white cake mix (including vegetable oil and egg whites
- 3 oz box Cherry Jello - only 1 cup of jello
- 8 oz Cool Whip
- 2 cans of 21 oz Cherry Pie Filling
- Optional Sprinkles - any color to match the Holiday or occasion
Instructions
- Preheat oven. Follow box cake mix instructions.
- Take a mixing bowl and mix up the box cake mix - be sure to add only egg whites, so that your cake will be white and not yellow

How do I store leftover poke cake?
- Place plastic wrap or aluminum foil over the top of your cake, then place into the refrigerator.
- You can also cut your cake into slices and transfer it to an airtight container.
Can I freeze cake?
Yes, you can not only refrigerate cake, but you can freeze cake. Cake will last about 3 months in the freezer.
āWhat is a dump cake?
A dump cake is similar to a poke cake, in that the ingredients are a cake mix and pie filling. An easy dump cake recipe is to dump your pie filling into a baking dish, add a cake box mix and melted butter. Then, bake until done! This is one of easiest desserts ever, plus they remind me of cobblers. So, instead of cherry pie poke cake you could make a cherry cobbler, YUM!
I was researching poke cakes and went down that “rabbit hole”, as my daughter Kylee calls it LOL, and found myself looking at dump cakes. I may start making these too! There are so many, so I’ll name a few:
