This crockpot cheesy broccoli rice casserole has been a family favorite for many, many years! It is so simple and the ingredients are easy to find at your local supermarket.
This casserole can either be a side dish or a main dish. To make this casserole a main dish you would simply add some cooked chicken or raw chicken and cook for a longer time than you would for a side dish.
My favorite meats and easiest to add to this casserole would either be canned chicken breast, rotisserie chicken or frozen grilled chicken strips (cooked). Or if you favor sausage, then you could cut up some smoked sausage and add to this recipe. Really, the possibilities are endless.
Is a broccoli rice casserole keto friendly?
Typically, the answer would be no, BUT you could make it more keto friendly by switching out the white rice for cauliflower rice and this would lessen the total carbohydrate amounts.

- chicken broth
- broccoli
- long grain rice
- cream of chicken soup
- cream of mushroom soup
- whole milk
- jar of cheese or any kind of shredded cheese or Velveeta cheese
- black pepper and salt to taste

Can I add instant rice to my broccoli rice casserole?
Yes and no, I have before and I liked it, HOWEVER some individuals feel that the rice becomes “mushy” so I would recommend the long grain rice and not the instant rice.
Can I add meat to my broccoli rice casserole?
YES, most definitely! To make this a full course meal, simple add some meat to the crockpot, here are some examples:
- Add 2-3 cans of chicken breasts
- Add the meat from a rotisserie chicken
- Add any leftover cooked chicken
- Add some frozen grilled chicken breast strips (fully cooked)
- Add some cut up smoked sausages
- Add any cooked ground meats or sausages that you would like to add
How do I make a cheesy broccoli rice casserole in a crockpot? (scroll down for a full printable recipe card)
- To the crockpot, add chicken broth, milk, cream of mushroom soup, cream of chicken soup, jar of cheese (or what kind of cheese that you have chosen to use) and black pepper
- Take a whisk and combine the liquid ingredients
- Then add the rice and broccoli and with a wooden spoon combine these ingredients
- Place the lid onto the crockpot
- Cook on high for 2 1/2 – 3 hours (since crockpots are different, at 2 hours taste of the rice and see if it is done and that the liquid has thickened up and not still watery. Cook longer if these 2 things are not ready)
- About 15-20 minutes before you are ready to serve, sprinkle on some shredded cheese and cook until the cheese is melted

Can I cook this cheesy broccoli rice casserole in the oven?
YES! Most definitely you can cook it in the oven. Add the same amount of ingredients to a 9×12 baking dish, cover the baking dish with aluminum foil and bake at 350 degrees for approximately 1 to 1 1/2 hours. Since ovens cook differently then I would check the rice at 1 hour and if it is not done continue to cook it until the rice is soft.
Crockpot Cheesy Broccoli Rice Casserole
An easy side dish or main dish!
Ingredients
- 3 cups chicken broth
- 1 cup milk
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- 1/2 tsp black pepper
- 1 jar (15 oz) of Cheese Whiz or an off brand or 1 lb of any shredded cheese
- 1-2 cups of shredded cheese for the top of the casserole (choose your favorite cheese)
- 1 lb of frozen broccoli
- 3 1/2 cups of long grain rice
Instructions
