- chicken – choose either boneless skinless chicken breasts or I chose boneless skinless chicken thighs
- Panko bread crumbs
- shredded mozzarella cheese
- buffalo sauce or choose any of your favorite sauces

- Take a large skillet and place it over medium high heat
- Pour 1/2 inch of either vegetable oil, canola oil or avocado oil into the pan.
- Take a large bowl and add the panko bread crumbs and the shredded cheese and combine
- To another bowl add the buffalo sauce or choice of sauce
- Dredge the chicken into the sauce and then into the bread crumb and cheese mixture
- Once the oil is hot add a single layer of breaded chicken to the skillet
- When the one side is a golden brown, take a spatula or fork and turn the chicken
- Cooking the chicken until it is golden brown on the other side and reaches a temperature of 165 degrees f.
- Place the cooked chicken onto a plate layered with paper towels to absorb any excess grease

- 1 cup to 1 1/2 cups of buffalo sauce or your favorite sauce
- 2 cups Panko bread crums
- 2 cups shredded mozzarella cheese
