Easy Tex Mex Casserole

If you need an EASY and CHEAP meal to prepare for your family this is it! All the ingredients are simple and you more than likely you will have them all in stock in your kitchen. So, give my Easy Tex Mex Casserole meal a try!

My kids love Dorito Casseroles, but this meal had my kids coming back for seconds and thirds, LOL! It may have been all the cheese, but whatever it takes for my kids to LOVE my meals then I’m all for it!

What ingredients are in Easy Tex Mex Casserole? (scroll down for the full printable recipe card)

  • ground beef – any COOKED ground meat can be used in this recipe, for example: ground turkey, ground chicken or ground sausage
  • rotisserie chicken – or canned chicken breasts or fresh cooked chicken
  • nacho cheese sauce
  • red enchilada sauce – green enchilada sauce can also be added to this recipe
  • cream of chicken soup
  • taco seasoning packet – or you can add your own taco seasonings: cumin, paprika, garlic powder, chili powder, salt and black pepper
  • tortilla chips – plain tortilla chips will work, but you could add any flavored tortilla chips too
  • shredded cheese – any kind of shredded cheese will work: sharp, cheddar, colby jack or pepper jack, any kind.

How do I make a Easy Tex Mex Casserole? (scroll down for the full printable recipe card)

  1. Preheat oven to 350 degrees f.
  2. Place a large skillet over medium high heat
  3. Add your ground meat
  4. Once the ground meat is brown and done pour off any excess grease
  5. Add to the ground meat the nacho cheese sauce, red enchilada sauce, cream of chicken soup, taco seasoning and mix well
  6. Add the shredded rotisserie chicken and combine
  7. Simmer for approximately 5 minutes to heat all the soups up
  8. Add a layer of tortilla chips to the baking dish
  9. Pour the meat soup mixture on top of the tortilla chips
  10. Add another layer of tortilla chips
  11. Add the shredded cheese
  12. Bake until the cheese is melted, approximately 5-10 minutes
  13. Serve and enjoy with your favorite side dish

  • 1 (10oz) red enchilada sauce
  • 1 (10.5oz) cream of chicken soup
  • 1 taco seasoning packet
  • 1 - 13oz bag of tortilla chips
  • 2 cups of shredded cheese

Instructions

How do I store leftovers?

Simply, add your cooled leftovers to an airtight container and place into the refrigerator for up to 3 days. Or, you can freeze the casserole for up to 3 months. Also, this is the perfect meal to prepare for lunches, simple place individual servings into meal prep containers and reheat at lunch time.
