This recipe has only a couple simple ingredients that can be purchased at your local grocery store.
- Chicken tenderloins – or chicken breasts, boneless chicken thighs
- frozen vegetables
- garlic powder
- lemon pepper seasoning
- lemon juice
- sugar (optional)
- olive oil

How do I make Lemon Pepper Roasted Chicken and Veggies? (scroll down for the printable recipe card)
- Preheat oven to 425 degree f.
- Take 2 baking sheets and line them with aluminum foil.
- Spray the aluminum foil with a nonstick cooking spray.
- Take a small bowl and add the garlic powder, lemon pepper seasoning and sugar. Mix well.
- Place the chicken onto one of the baking sheet and the veggies onto the other baking sheet.
- Drizzle olive oil over the chicken and over the veggies.
- Sprinkle half the seasoning over the chicken and other half over the veggies.
- Take your hands or spoon and coat the ingredients well.
- Squeeze the lemon juice over chicken and veggies.
- Bake chicken for approximately for 20-25 minutes or until the chicken is 165 degrees f.
- To brown the chicken, broil for approximately 5 minutes.
- Bake veggies until they are soft and tender, approximately 25 minutes.
- Remove from the oven and enjoy!
