What a delicious and simple recipe! My family loves this Mexican corn, especially if it is chilled! This recipe is easy and only requires a few simple ingredients that you can purchase from your local grocery store.

- corn
- mayo
- sour cream
- chili powder
- garlic powder
- salt
- red bell pepper
- green bell pepper
- lime juice
- cilantro
- cotija or queso fresco cheese
Step 1
Add cans of drained corn into a medium size bowl
Step 2
Add mayo, sour cream and seasonings to the corn. Take a wooden spoon and mix the ingredients well.
Step 3
Squeeze the juice of one lime into the corn mixture.
Step 4
Add diced up bell peppers and cilantro to the corn mixture and mix well.
Step 5
Crumble and sprinkle the cheese over the top of the Mexican corn and mix well.
Step 6
Chill the Mexican corn in the refrigerator for at least an hour. This dish is much better cold! Yummy!
Easy Mexican Corn For Beginners

Ingredients
- 4 cans of drained whole kernel corn
- 3 Tbsp Mayo
- 3 Tbsp Sour Cream
- 1 tsp Garlic Powder
- 1 tsp Chili Powder
- 1/4 tsp Salt
- 1 diced Green bell pepper
- 1 diced Red bell pepper
- 1 lime (juiced)
- Cilantro (add as much as you desire)
- 1/4 - 1/2 cup Cotija cheese
Instructions
- Drain the corn and add to a medium size bowl
- Add mayo, sour cream and seasonings. Mix well.
- Add the juice of 1 lime. Mix well.
- Add diced bell peppers and cilantro. Mix well
- Add the crumbled cheese and mix well
- Chill in the refrigerator for at least 1 hour. Can be eaten immediately, but is better cold.
