A classic take on the famous snickerdoodle cookie, these snickerdoodle cookie bars will quickly become a family favorite! Soft, Chewy and covered in cinnamon & sugar, what could be better??? Plus, the bars are way easier to make than rolling each individual cookie in cinnamon & sugar, but just as good.
The texture of these cookie bars are absolutely amazing! They are a take off of the sugar cookies bars (with purple frosting, of course) that I made for my birthday last month (recipe will follow soon!) Perfectly soft and chewy.
Anyone that knows me very well, knows that I absolutely LOVE sweets. I love to bake anything with sugar, but I also don’t like to because I don’t want dozens of cookies, pies or cakes just sitting around. Mainly because I want to eat a lot of whatever I make and my waistline does NOT need it, lol.
So, I made these especially on a day that the youth were gathering at our church. Usually on our youth nights, I’m asked to bring dessert and this recipe was perfect. Everyone seemed to love them and I only had a couple left to take home.
They have the absolute perfect amount of cinnamon in the dough and the cinnamon & sugar on top just makes these cookie bars. I use a combination of butter and cream cheese in these cookies bars and it makes the texture so soft and chewy. Typically, the cookies just call for butter, but the cream cheese definitely adds to the texture of these bars.

Snickerdoodle Cookie Bars Ingredients –
- Butter
- Cream Cheese
- Sugar (granulated)
- Brown Sugar
- Egg
- Vanilla
- All – Purpose Flour
- Baking Soda
- Salt
- Cinnamon
It’s all of your basic cookie ingredients, plus the cream cheese. Typically butter is used in cookies. I’ve actually never used cream cheese in a cookie or bar recipe until I made my sugar cookie bars last month and let me tell you, it makes all the difference! It makes the absolute perfect texture!
Directions –
- With a stand mixer, beat butter and cream cheese.
2. Add in both sugars, beat for a couple minutes
3. Add in egg and vanilla, mix well.
4. In a seperate bowl, mix flour, baking powder, baking soda, salt and cinnamon.
5. Gradually add the dry mixture to the wet mixture, mix until all combined
6. Line a Jelly Roll pan with parchment paper, spray with cooking spray
7. Spread the douogh on the pan, leaving the dough about 1/2” thick. (it may not cover the pan completely)
8. Mix sugar and cinnamon together and sprinkle over the top of the dough
9. Bake on 350° for 25 minutes.
10. Cut into bars, yields about 32- 36 bars (mine were probably 2” x 3”)

- 8 oz Cream Cheese (softened)
- 1 C Sugar
- 1/2 C Brown Sugar
- 1 Egg
- 2 tsp Vanilla
- 2 1/2 C All - Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 1/2 tsp cinnamon
Topping
- 1/2 C Sugar
- 1/2 tsp cinnamon

Notes
- I used a jelly roll pan becasue that's what I had on hand, a cookie sheet with sides would work just as well too.
- I make sure to spray my parchment paper just to make sure nothing sticks

Perfect, Perfect dessert for your next party or event. These are quick and easy desserts to make. Sure to be a crowd pleaser as I have found out. When I made these for a group of young people, they all loved them and wanted more than one, lol.
