I have fallen in LOVE with Lemon desserts! And, now I LOVE puff pastries! While making this dessert my mind was going OVERBOARD with filling ideas for these delicious frozen puff pastries!
This recipe came about as Gerald and I were on a little getaway trip to Broken Bow, Oklahoma. I love to cook and Gerald loves to eat my cooking, lol, so while on our trip I had created a couple of recipes. I believe 5 recipes to be exact, lol!
What Ingredients do I need to make Lemon Turnovers?
- Lemon pie filling
- Puff Pastry sheets
- Water or egg whites to seal edges of dough
- Powdered sugar (optional glaze)

What is a turnover? Turnovers are a sweet or savory portable meal or dessert.
What does turnover mean? A turnover is a pastry dough filled with a filling, then folded over, sealing the edges together and baking.
How are turnovers made? Turnovers are made by taking a pastry dough, usually a puff pastry, and filling it with sweet fillings or savory fillings. It is like a hand held pie or meal.
What is the difference between a pie and a turnover? A pie is circular and a turnover is folded pastry that is triangle in shape and can be hand held.
How do I make Lemon Turnovers? (Scroll down for printable recipe version)
- Gather ingredients: Can of lemon pie filling, package of puff pastry sheets, powdered sugar for optional glaze.
2. Gather supplies: Pizza cutter or knife to cut the puff pastry, spoon, baking sheet, parchment paper or spray oil for the baking sheet.
3. Thaw out the puff pastry dough by removing it from the freezer and placing it on the counter. Leave out for no more than 30 minutes. It does thaw quickly and you will be able to unfold the dough.
4. Preheat oven to 400 degrees.
5. With a pizza cutter or knife cut each sheet of puff pastry dough into 4 squares. Most puff pastry packages come with 2 sheets of dough. So, you will have a total of 8 squares.
6. After you cut the dough into squares, spoon approximately 2 tablespoons of lemon pie filling onto each square.
7. In a small bowl add water or egg whites and using your fingers or a brush, brush the dough edges. This will help the pastry dough to seal and a little of the filling may still leak out, but that is ok!
8. Fold over each pastry into a triangle and press the edges together with your fingers.
9. Either place a sheet of parchment paper onto a baking tray or spray the pan with oil.
10. Place pastries onto a baking sheet (or cookie sheet).
11. Bake approximately 15-20 minutes, until the dough is golden brown.
12. Cool completely before adding optional glaze.
13. Optional glaze: 1/4 cup powdered sugar & 2 tablespoons of water (add more water if glaze is too thick to drizzle over turnovers)
Storing & Reheating Turnover Tips!
How to store a dessert turnover? Let the turnovers cool completely. Place them in an airtight container and then into the refrigerator for up to 5 days.
How do you store lemon turnovers so they don’t get soggy? As long as they were baked until crispy, you can store them in an airtight container AFTER they have cooled completely. Place them in the refrigerator for up to 5 days.
Should I store lemon turnovers in the fridge? Research shows that you can leave turnovers out on the counter for up to 2 days, however, after my turnovers completely cool, I place mine into the refrigerator for up to 5 days.
How long are lemon turnovers good for? For up to 5 days in the refrigerator.

- 1 can lemon pie filling (22 oz) (you'll only use half of the can, so freeze the extra)
- 1 package (2 sheets) Puff Pastry Ready to bake sheets
- optional glaze: 1/4 cup of powdered confectioners sugar & 2 Tbs water
- water or egg whites to seal dough edges
Instructions
