Who doesn’t love a one pot dinner meal recipe, plus a recipe that the whole family will love???? I know that I do! This recipe is easy and with only a few ingredients that you will find at your local grocery store.
My family has fell in love with the dark meat of chicken thighs. So much, that they ask for chicken thighs A LOT, LOL! They love pan-seared chicken thighs, where I just add a little oil to a non-stick pan that has been placed over medium high heat and then I place the boneless thighs into the hot oil. Even tho, these are skinless thighs, they will cook a “crispy skin” like skin-on thighs. Yum!

How do I make Mushroom Chicken?
- Take a large quart pan or a large skillet and place over medium heat on the stove top
- Add a tablespoon of oil and 2 tablespoons of butter
- Once the oil and butter are hot add the boneless skinless chicken thighs to the frying pan
- Add salt and black pepper to the chicken thighs
- Cook chicken until it has reached an internal temperature of 165 degrees using a meat thermometer or an instant read thermometer. And is a golden brown on the outside (cooking time will vary)
- While the chicken thighs are cooking, cook the pasta as directed on the package, rinse and set aside
- Remove the chicken thighs from the pan and place onto paper towels. Be sure to scrap the good stuff of brown bits off of the bottom of the pan for extra seasoning
