As a stay at home and homeschooling mom, I need easy and quick recipes and this casserole is it! One of the ingredients, which is my favorite staple, is canned white chicken breast. However, this recipe can be made with the canned chicken breast, cooked chicken breasts, leftover chicken or rotisserie chicken. Choose any shredded chicken for this great weeknight recipe!
What ingredients are in white chicken enchiladas?
- cooked chicken breast – canned chicken, rotisserie chicken or any cooked shredded chicken breast
- ground beef is always an optional if you don’t want chicken
- chopped green chilis OR a can of Rotel (either one will work)
- cream cheese
- pepper jack cheese or any shredded cheese
- green enchilada sauce or homemade green sauce
- sour cream – a sour cream sauce is made with sour cream and green chiles enchilada sauce
- regular tortillas or low carb flour tortillas or keto tortillas
- corn tortillas are a great idea too
- shredded cheddar cheese or shredded Monterey jack cheese
- optional – green onions and fresh cilantro
- taco seasoning is optional or homemade taco seasonings: garlic powder, black pepper, onion powder and tsp chili powder
- optional olive oil for chicken breast if you don’t purchase canned chicken or a rotisserie chicken from the grocery store
- optional – some recipes call for chicken broth, however I believe that it would make this casserole too watery.

How do I store easy chicken enchiladas leftovers?
This is a great recipe to meal prep. Plus, you will find out that it will be a favorite for the whole family! So, be sure to make a double batch of this easy recipe!
Take any leftovers of the creamy chicken enchiladas and place them in an airtight container or place plastic wrap or aluminum foil over the casserole dish. Then place leftovers into the refrigerator for up to 3-4 days or in the freezer for up to 3 months.

- Preheat oven 350 degrees f
- Gather ingredients and supplies
- To make the chicken mixture that goes inside the enchiladas; take a large mixing bowl and add the chicken breast, chopped green chilies, cream cheese and pepper jack cheese
- Mix well
- Spray the baking pan with a non-stick cooking spray
- Spoon the chicken mixture into each the center of the tortilla and roll up
- Place seam side down into the bottom of the baking dish
- To make the amazing sour cream sauce take a small bowl and add the can of green enchilada sauce and sour cream.
- Mix well
- Pour sauce over enchiladas
- Add remaining cheese
- Bake 20-30 minutes until you have melty cheese
- Optional: add a side Mexican rice, refried beans or warm tortillas with honey!

Ingredients
- 2 - 12.5oz cans of chicken breasts
- 4.5oz can of chopped green chiles
- 8oz cream cheese
- 8oz pepper jack cheese
- 10oz can of green chiles enchilada sauce
- 8oz sour cream
- 8 tortillas
- 2 cups shredded cheese
Instructions
- Preheat oven to 350 degrees and spray baking dish with oil
- Take a large bowl for the chicken mixture: add chicken breasts, chopped green chiles, cream cheese and pepper jack cheese
- Mix well
- Spoon chicken mixture into each tortilla and roll up
- Place rolled tortillas into baking dish
- In a small bowl mix the green chiles enchilada sauce and sour cream
- Mix well and pour over the top of the enchiladas
- Add the shredded cheese
- Bake for 30 minutes until cheese is completely melted.
