As a kid, my mom made a similar version of this baked chicken. However, she would take whole cornflakes and roll the chicken into them and bake.
KETO TIP!!!
- replace the crushed cornflakes with crushed pork rinds
- replace the regular hamburger bun with keto bread or keto hamburger buns
But, this version that I have created is much closer to the taste of fried chicken. I added the cornflakes to my Ninja and pulverized them, lol. PLUS, PLUS – I DOUBLED DIPPED the chicken and they were so crunchy!
Of course, IF you REALLY want FRIED chicken, then you can always take this chicken cook it by deep frying it in hot oil instead of baking it.
Today, there are a lot of frying options, plus a wide variety of cooking oil or frying oil at your local supermarket: (be sure to use oils that have a high smoke point)
- vegetable oil – recommended for its high smoke point
- canola oil – recommended for its high smoke point
- peanut oil – recommended for its high smoke point
- safflower oil
- coconut oil
- avocado oil – recommended for its high smoke point
Another cooking option besides cooking in a deep fryer is to cook your chicken pieces in an air fryer, this technique is a healthier option and will take less oil. However, I have best results with baking my pieces of chicken in the oven until crispy and golden brown.
I promise y’all that you cannot tell that the coating is cornflakes. As a kid, I could definitely tell that my mom coated her chicken in cornflakes, BECAUSE she left the cornflakes whole. And, that’s ok, because that’s all she knew to do. But, this version is a sneaky way to get the taste of fried chicken, but yet a healthy way for your family, LOL.
And, you could always sneak in some dehydrated veggies in with the cornflakes when you pulverize them, lol, I know the correct word isn’t pulverize, LOL, but I like that word for some reason!
I LOVE a Chick-Fil-A crispy chicken sandwich. I’ve never thought that I could get close to making a chicken sandwich like theirs, HOWEVER, I can take this baked chicken, add tomatoes, lettuce, pickles, cheese to a bun and I have a chicken sandwich that is SOOOOO close to Chick-fil-A crispy chicken sandwich! This is so exciting, because it’s a healthier version of a crispy chicken sandwich.
And, baking this chicken is so much easier than frying in oil, in a skillet and getting splattered with oil and burn, lol! You just coat the chicken in crushed cornflakes and bake. Letting the oven do all the work, 20-25 minutes and it’s done.
What kind of chicken do I need for my flourless crispy chicken?
- white meat chicken breast – if you are making a chicken sandwich
- chicken thighs or any dark meat
- chicken wings
- boneless chicken
- chicken drumsticks
- chicken strips or chicken tenders – these are found raw in your freezer section of your local grocery store
Can a crispy chicken sandwich be keto?
YES, YES!! Just replace this regular bread for a keto bun or keto sliced bread. I have 2 different ways to have keto or low carb crispy fried chicken:
- Instead of crushed cornflakes, all purpose flour or regular flour (for traditional fried chicken) CHOOSE to dip your raw chicken in crushed pork rinds and seasonings!
- To reduce the amount of carbohydrates do a single dip of chicken into the cornflakes, instead of double dipping to lower the carbohydrate count for those who are on a low carb diet. The net carb with the cornflakes would be approximately 13 net carbs, which is low carb considering a Chick-fil-A crispy chicken sandwich has 38 net carbs.
What seasonings can I add to my crispy coating for my “regular fried chicken”
- black pepper
- salt
- onion powder
- garlic powder
- cayenne pepper
- parmesan cheese
- lemon juice – add to egg wash
- sesame oil – add to egg wash
- melted butter – add to egg wash
- jalapeno juice – add to egg wash
And, one more change to this recipe to make it ketogenic – leave out the sweet chili sauce and just add mayonnaise to your sandwich or any other ketogenic condiment that you like.

The best way to have crispy crust fried chicken is to use flour substitutes. My favorite and the one that I have had better results with is the crushed corn flakes and that is what is in the recipe below, however here are some other ideas for crispy skin chicken without an all purpose flour mixture:

- crushed pork rinds for keto crispy chicken
- rice flour
- coconut flour
- almond flour
- potato starch

How to I make a Baked Crunchy Hot Honey Chicken Sandwich? (scroll down for printable recipe card)
- Preheat oven 425 degrees – be sure to have a 425 degree oven before placing chicken into the oven.
- Prepare the sweet chili mayo and chill
- Add a sheet of parchment paper to a baking sheet
- Cut each chicken breast in half to reduce the thickness
- Crush up cornflakes in a food processor or Ninja, then pour into a large bowl, add seasonings and mix well
- In a separate bowl add the eggs and beat with a fork, then add the hot sauce
- Take one piece of chicken at a time and dip into the egg mixture then into the cornflake mixture. I double dip my chicken, so I dipped mine again into the egg mixture and then again into the cornflake mixture.
- Place each dipped chicken breast onto the baking sheet
- Cooking time will vary, but bake for approximately 25 minutes or until the internal temperature of the chicken breast is 165 degrees f with a meat thermometer.
- While the chicken is cooking, add the honey and hot sauce to a small sauce pan and warm it up on low heat.
- Once chicken breast is done, pull the baking sheet out and drizzle the Hot Honey sauce over each chicken breast. Then, place chicken on paper towels or a wire rack to absorb any excess oil.
- Prepare your sandwich and enjoy!
How do I make the Hot Honey sauce?
- Add 1/2 cup of honey to a small saucepan
- Add 2 Tablespoons of Frank’s Red Hot sauce to the honey
- Cook on low heat until the honey is warm.
- Once chicken breasts are done cooking, drizzle the Hot Honey sauce on each piece of chicken. SOOOO GOOD!!
Sweet Chili Mayo Sauce Ingredients
- Panda express sweet chili sauce
- Mayonnaise – any mayo will work, but Hellmann’s Mayonnaise Real Mayo is the most popular mayonnaise.
How do I make sweet chili mayo?
- Take a small bowl
- Add the 3 Tablespoons of Panda Express sweet chili sauce and 3 Tablespoons of mayonnaise
- Mix well and chill

Ingredients
Crispy Chicken
- 3 large chicken breast cut in half
- 8 cups of crushed cornflakes
- 1 tsp salt
- 2 tsp paprika
- 1 tsp garlic powder
- 4 eggs
- 3 tbsp hot sauce
Hot Honey Sauce
- 1/2 cup honey
- 2 tbsp hot sauce
Sweet Chili Mayo
- 3 tbsp of mayonnaise
- 3 tbsp Panda Express Sweet chili sauce
Instructions
- Preheat oven 425 degrees
- Prepare the sweet chili mayo and chill

- Cut up 4-5 sweet potatoes and place them in a bowl
- Drizzle olive oil over the top, salt and mix up. I do this part with my hands to ensure all the sweet potatoes get some olive oil on them.
- Place sweet potato fries onto a baking sheet that is lined with parchment paper
- Keep some space between each fry so that they will bake crispier
- Bake at 400 degrees for about 30 minutes.

What temperature do I fry chicken at? A temperature of 350 degrees f is perfect for frying chicken. Cooking over medium heat will work for keeping your oil hot and be sure to check the internal temperature of your chicken and when it reaches 165 degrees f with a meat thermometer your chicken is done.
Can I eat fried chicken the next day? Yes! What’s better than cold fried chicken?!?!?! You can eat leftover chicken as long as it has been stored correctly. Always, place the leftover chicken into an airtight container (or Ziploc bag) and place it into the refrigerator. The leftover chicken will be good for up to 3 days in the refrigerator.
Can I fry chicken in a large cast-iron skillet? Yes, a cast-iron skillet is perfect for frying chicken in. Be sure to preheat the pan, add an oil that has a high smoke point and wait until the oil is hot before adding the chicken. Fry chicken until both sides are a golden brown and the internal temperature reaches 165 degrees f. with a meat thermometer.
