Chicken breasts are such a versatile meat. They can be cooked in so many ways and can be stuffed with endless ingredients. In this post, I have chosen 2 different types of stuffing for my chicken breasts and they were both “winner, winner, chicken dinner” LOL!
The first stuffing that I chose was chopped broccoli and shredded cheese. The next stuffing that I chose was chopped bacon, shredded cheese, cream cheese and Ranch dressing mix. So, this recipe shows you how to make a Cheesy Broccoli Stuffed Chicken and a Bacon Ranch Stuffed Chicken.
For these recipes, after I stuffed the chicken breasts, I took a large skillet and added a little olive oil in the pan. Placed it over medium high heat and once the oil was hot I added the stuffed chicken breasts and browned them on each side.
Then, I placed the chicken breasts on a baking sheet and into a preheated oven cooking chicken breast until the internal temperature of the chicken reaches 165 degree f. checking with a meat thermometer. Cooking time will vary depending on how thick the boneless skinless chicken breasts are.

To bake chicken breast at 375 degrees f oven. it will take approximately 45-60 minutes or until the internal temperature of the chicken reaches 165 degrees. At 400 degrees f. the chicken could take 40-50 minutes
What other spices can I add to my cream cheese mixture to season my chicken breasts?
Your local grocery store has so many options as far as seasonings go. I love to add garlic powder or onion powder to mine, but you can also add Italian seasoning, lemon pepper, or chili powder.
What kind of cheese to add to my stuffed chicken breasts?
Plus, you can choose any kind of cheese to add to your stuffed chicken breasts. For this recipe, I chose colby jack, but try some of these: parmesan cheese, feta cheese, goat cheese, or mozzarella cheese. Any of these cheeses would be delicious.

- 6 boneless skinless chicken breasts
- 2-4 Tbsp olive oil
- salt & black pepper
2 Cheesy Broccoli Stuffed Chicken Breasts
- 1 lb of frozen chopped broccoli
- 2 cups of shredded cheese
4 Bacon Ranch Stuffed Chicken Breasts
- 6-8 slices of cooked bacon (chopped) or 1 cup of bacon bits
- 1 (8oz) block of cream cheese
- 3 cups of shredded cheese
- 3 Tbsp of Ranch dressing mix
Instructions
- Preheat oven to 375 degrees f.
- Take a bowl and add cooked chopped bacon, cream cheese, shredded cheese and Ranch dressing mix. Combine and set to the side
- Take a bowl and add chopped broccoli and shredded cheese and combine well
- Cut a pocket into 4 chicken breasts and add the bacon mixture
- Cut a pocket into 2 chicken breasts and add the broccoli mixture
- Place a skillet over medium heat and add a little olive oil
- Once the oil is hot, cook the stuffed chicken breasts to a golden brown on the sides of the chicken (they are not fully cooked yet). Adding salt and pepper to each side.
- Place chicken breasts on a baking sheet to finish cooking them
- Bake for approximately 60 minutes or until the internal temperature reaches 165 degrees f.
