Walking Taco Casserole

Who doesn’t love walking tacos??? Well, this recipe makes those walking tacos into a casserole, so as a mom that makes this dish not as messy, lol.

A walking taco is usually a small bag of chips that is cut open on the side and the fillings, toppings, etc are added to the top of the chips in the bag. Which is a great idea for outdoor parties or events, but for the dinner table this recipe is a lot easier.

What toppings can I add to a walking taco?

  • shredded lettuce
  • tomatoes
  • green onions or any kind of onions
  • black olives
  • jalapeno peppers
  • salsa or picante sauce
  • sour cream
  • guacamole

What ingredients are in a Walking Taco Casserole? (scroll down for the full printable recipe card)

  • ground beef – ground turkey or ground turkey can also be used in this recipe
  • chopped onion – any kind of onion will work; white, yellow or purple
  • packet of taco seasoning
  • water for the taco seasoning
  • chili beans – or you can use black beans (be sure to rinse the black beans if you choose to use those)
  • diced tomatoes with green chilies
  • Cheese Doritos – any flavor of chips will work or even Frito corn chips are tasty!
  • shredded cheese – any kind of cheese
  • toppings: lettuce, tomatoes, green onions, sour cream, etc.

What side dishes go with a walking taco casserole?

  • Mexican rice or Spanish rice
  • refried beans
  • chips and salsa
  • guacamole
  • garden salad

How do I make a walking taco casserole? (scroll down for full printable recipe card)

  1. Preheat oven to 350 degrees f.
  2. Place a medium size skillet over medium high heat.
  3. Add the ground beef and chopped onion.
  4. Cook ground beef until it is completely done. Drain any excess grease.
  5. Add the cans of chili beans (undrained), diced tomatoes with green chilies (undrained), and the prepare taco seasoning packet with water.
  6. Simmer for approximately 5 minutes.
  7. Take a 9×13 baking dish and layer half of the bag of Doritos to the bottom of the dish.
  8. Spoon half of the meat mixture to the top of the chips.
  9. Add half of the shredded cheese to the top of the meat mixture.
  10. Repeat once more time.
  11. Bake in the oven until the cheese is melted. This takes approximately 5-7 minutes.
  12. Remove the baking dish from the oven.
  13. The toppings can be added to the entire dish or added to each serving as it is plated up.
  14. Serve and enjoy!

  • 1 can(15oz) Ranch style beans or chili beans (undrained)
  • 1 can(10oz) Rotel or diced tomatoes with green chilies (undrained)
  • 1 party size (14.5oz) Cheese Doritos
  • 3 cups shredded cheese
  • 2 cups shredded lettuce
  • 1 medium size tomato
  • 1 bunch green onions
  • sour cream

Instructions

  1. Preheat oven to 350 degrees f.

How do I store leftover taco casserole?

Once the leftovers are completely cooled place them into an air tight container. Place the container into the refrigerator for up to 5 days or in the freezer for up to 3 months.

This is also a great meal prepping meal. Simply divide up the leftovers and place them into meal prep containers and refrigerate or freeze.
