This is the Easiest Cheesecake Chimichangas recipe, because it is only 5 ingredients and takes very little time to fry. You can also use strawberries, blueberries, raspberries or other different fruits in the filling.
Other chimichangas recipes may use flour tortillas, but instead I use egg roll wrappers. I find it easier to buy egg roll wrappers from the store, but if you prefer you can make your own egg roll wrappers. Plus, you can buy egg roll wrappers and place the package in the freezer, so you will have them when you are ready to make these delicious chimichangas!

Directions
The first step is to make sure the cream cheese is soft enough to work with. Because if the cream cheese is to hard it makes it harder to mix everything together. If the cream cheese is in the freezer, I like to place it in the refrigerator overnight.
Now you will get to make the inside filling. Place the cream cheese in a bowl with the sugar, and the vanilla. Next, you mix these ingredients together and try to get the filling as smooth as you can. I like to use a hand held mixer, but if you prefer you can mix the filling by hand, this is what I use to like to do, or use a stand mixer.
After the filling is mixed together you start making the chimichangas. First, make sure that the counter that your making them at is dry. Then lay out an egg roll wrapper with one of the corners pointing at you. To the side have a small bowl of water. Next, put some of the filling in the middle of the egg roll wrapper and fold. This is how I fold the egg roll wrappers.
Take the corner that’s pointing at you and fold it over the filling, then dip one of your fingers in the small bowl of water and place a little bit of water on the other three sides.
Now fold each side corner of the wrapper over and roll to the top corner. And to make sure it is secure you may have to put a little more water on the top corner. Repeat for all the other wrappers.
After you fold all the wrappers it is time to fry the Chimichangas. To fry them you could use a deep fryer with a basket, but if you don’t have one you can also use a pan or pot with oil. I like to fry two at a time, because these do not take that long to fry at all. When I made these for the pictures I just used a cast iron pot with oil and when the oil was hot enough it took less than two minute to fry.
Fry the chimichangas until their golden brown or however brown you like them to be. After you fry all of them sprinkle powder sugar over them. Or instead you could use cinnamon and sugar and sprinkle that over them and enjoy.
The Easiest Cheesecake Chimichangas
This is a really good desert recipe, because it is simple and I think the perfect way to use cream cheese.
Ingredients
- 16 oz. Cream Cheese
- 1 Cup Sugar
- 1 tsp Vanilla
- 15 Count Package of Egg Roll Wrappers
- Powdered Sugar or Cinnamon and Sugar
Instructions
- place cream cheese, sugar and vanilla in a bowl and mix together with a hand mixer, stand mixer, or by hand.
- lay out an egg roll wrapper and put 2 Tbsp of the filling in the middle and fold. Repeat for other wrappers.
- Fry in a deep fryer, or in a pan or pot with oil until golden brown. Approx. 1 minute frying time on each side.
- Sprinkle powdered sugar or cinnamon and sugar mixture over the chimichangas and enjoy. Place remaining chimichangas in refrigerator.
