Since it’s officially Fall, that means it is time for all the Fall Baking! And, I’m sure that you will definitely want to try these Pumpkin Spice Cookies! They are Perfectly Crispy on the edges and so soft and chewy in the middle, loaded with lots of Pumpkin Spice truffles….Yum!
Before I go any farther, I just want to tell you how easy it is to make these cookies. It only takes 5 ingredients and they will be the best cookies that you have ever eaten! And, do you want to know what the main ingredient is…..It’s a boxed cake mix!
Before you say, ‘Boxed cake mix cookies…How can those possibly be any good?’ Seriously, I’m not kidding! They make the absolute best cookies ever! I was kinda thinking the same thing when I made them for the first time and I can tell you this, that I probably will not make a cookie from scratch again….well, at least maybe not for a very long time.
My first Experience with Cake Mix Cookies where when I made my Orange Dream Cookies. They remind me kinda of fruit loops and they are so addicting! I could have ate a dozen by myself.
Then, my 2nd ones were probably even better. They were S’more Cookies loaded full of extra chocolate chips, mini marshmallows and graham crackers

Tips –
- It’s best to refrigerate the dough for about 30 minutes before you roll it into balls. The dough can be sticky and this helps. After I refrigerated my dough, I didn’t have any trouble rolling it into balls
- Be sure to NOT over bake these cookies! This is a big key to them having the perfect texture. You do NOT want them to brown in the oven any! Once you take them out of the oven they will cool and set perfectly! I only baked mine for 10 minutes exactly and they were absolutely perfect!
- Once the cookies have completely cooled, you can put them in a bag and freeze them. Then you can just pull them out when needed. I would pull them out about 2 hours before I served them and lay them out flat (not on each other) while they thaw, so they won’t stick to each other.

- Cake Mix (I used a Yellow Duncan Hines)
- Vegetable Oil
- Eggs
- Pumpkin Pie Spice
- Nestle Pumpkin Pie Spice Filled Baking Truffles
Making them is super simple! You basically just add all your ingredients into a bowl, mix, refrigerate, roll into balls and bake.
Start by adding your cake mix, Pumpkin pie spice, oil and eggs into the bowl. Mix well.
Add in the pumpkin spice truffles and mix well
Refrigerate for at least 30 minutes before rolling into balls.
Place parchment paper on a cookie sheet, spray with oil and place cookies about 2” apart. I just roll them into about tablespoon balls with my hands.
Bake on 350° for 10 minutes. Cookie may still look slightly soft in the middle but this is perfect. Do NOT over bake them. That is the key to the perfect cookie!
Pumpkin Spice Cake Mix Cookies
Packed full of pumpkin spice these cookies are the best! They are perfectly crisp and crunchy on the outside, but so soft and chewy in the middle!
Ingredients
- 1 (15.25) Duncan Hines Yellow Cake Mix
- 2 Eggs
- 1/2 C Vegetable Oil
- 1 T Pumpkin Pie Spice
- 1 (9 oz) Bag of Nestle Pumpkin Spice Filled Baking Truffles
Instructions
1. Add cake mix, pumpkin pie spice, oil and eggs into a bowl, Mix well.
2. Add in pumpkin spice truffles and mix in.
3. Refrigerate for 30 minutes
4. Preheat oven to 350°
5. Line cookie sheet with parchment paper and spray with oil
6. Roll dough into about Tablespoon size balls, placing on cookie sheet about 2'' about
7. Bake for approx. 10 minutes. You do NOT want the cookies to brown any around the edges.
8. Enjoy!
