This recipe or idea of a Chicken Salad Graze Box came about during the month of July when the temperatures were staying up in the 100’s. We have a food truck and we needed some cold and refreshing meals to serve, because cooking in our food truck over a grill is too hot which I quickly found out! 🤣 So, I decided to find some different types of food to sell that wouldn’t require a lot of cooking over our grill. 🙂
One of our most popular meals is our chicken salad sandwiches. So, I took that idea and added fruit and veggies to the meal.
I really can’t decide what to call it, lol. I’ve heard these meals called “Graze” boxes, adult lunchables and charcuterie boards/boxes — and yes, I have to look that spelling up EVERYTIME, lol. Besides, pronouncing the word, ha. It’s almost a too fancy of a word for Southern Oklahoma, lol. But, anyway whatever it’s called it is a delicious meal and plus an added snack too. It’s enough food for a little “grazing” thru the day 🙂
My favorite type of salad for these graze boxes is chicken salad, but any type of salad will work and I’ll give you some different examples. My chicken salad is made up of cans of white chicken breast, red grapes, celery, pecans, mayonnaise and sweet relish. In our food truck, our most popular sandwich is our chicken salad on toasted sourdough bread sandwich, which is an unusual food truck item. I believe the reason that our chicken salad is so popular is that I add our own homemade sweet relish to our chicken salad. I have tried to just add sweet relish from the supermarket, but it is not the same without our sweet relish.
Choose Any Salad:
- Chicken salad (store bought or homemade)
- Tuna salad
- Pimento cheese
- Pasta salad
- Asian slaw salad
- Caesar salad
- Chef salad
- Garden salad
- Italian Cucumber & Tomato Salad
Mix up the Veggies:
- Baby carrotts
- Cucumbers
- Tomatoes
- Broccoli
- Cauliflower
- bell peppers
- Squash
- Celery
- Radishes
Cheese Options are Endless:
- block cheese
- sliced cheese
- Sharp cheddar
- Pepper Jack
- Mozzarella
This is the cheese that I like to add to my Graze boxes. There are a couple different types in this cubed style of cheese.
Choose Crackers or Chips
Crackers or chips are must have too. I almost couldn’t decide what cracker to buy, because the choices are endless. However, I decided on a plain club cracker which are delicious. A great idea would be to add veggie straws or sweet potato chips. But, I did learn about the crackers and cookies that you need to add those 2 items right before you serve the graze boxes, because the crackers tend to get soft or I will package those items in a separate little baggy to keep them from getting soft or stale.
Adding fruit to my Chicken Salad Graze Box was essential. I chose little oranges and grapes, but any fruit could be added to the graze boxes.

Sweet Treats
And let’s not forget the sweet treat!!! For this Graze box I added a chocolate chip cookie, but the options are endless. From cookies to candy anything would be great! Sometimes, I will make chocolate fudge to add to these graze boxes, which is a requested dessert a lot of the time.
Graze Box Containers
The options for containers that you choose are also endless. From plastic meal prep containers that can be purchased to square boxes that also can be purchased in the cake decorating section of Wal-Mart or Hobby Lobby. Also, these clear deli containers I did purchase from a business online called Webstaurant.
