This is an easy AND quick meal to prepare for Dinner or for meal prepping lunches. I came up with this meal for my husband, Gerald. I cook and meal prep him Lunches for work and this is an easy recipe to make!
Creole Seasoning, YUM!
This recipe only has a few ingredients, actually only has 3 ingredients, plus the seasoning and olive oil.
By using the bags of frozen chicken breast tenderloins you will save a lot of time. Plus, by purchasing the Ben’s Original Ready Rice you will also save more time.
I add Creole seasoning to my chicken and rice, however you can leave this spice out or choose a totally different seasoning.
Can I leave out the broccoli?
Yes, if you do not like broccoli, then simply leave it out of this recipe.
Is chicken & rice keto friendly?
This recipe is not keto friendly, however to make this meal keto you will need to only exchange the rice for a bag of frozen cauliflower rice that you can purchase at your local grocery store. All of the other ingredients of chicken, broccoli, olive oil and seasonings are keto friendly.

- frozen all ready cooked grilled chicken that is located in your freezer section of your local grocery store

- frozen broccoli or fresh broccoli

- for a keto version of this recipe exchange the rice with a cauliflower rice

- you can add your favorite spices or seasonings

How do I make creole chicken & rice? (scroll down for printable version of a recipe card)
- Place a large skillet over medium high heat
- Drizzle some olive oil into your pan and begin to heat the oil
- Add your frozen chicken breast tenderloins into the pan and place a lid onto the pan
- Turn your chicken half way through cooking
- Add your frozen broccoli to the skillet
- Once the chicken is fully cooked cut it up into small pieces
- Add creole seasoning and rice
- Place lid onto skillet and simmer for approximately 5 minutes
- Remove from heat

Ingredients
- 2 lbs of chicken breasts
- 1 lb of frozen broccoli
- 2 bags of Ready Rice
- 2 tsp creole seasoning
- 1 Tbsp olive oil
Instructions
- Place a large skillet over medium high heat
- Drizzle some olive oil into your pan and begin to heat the oil
- Add your frozen chicken breast tenderloins into the pan and place a lid onto the pan
- Turn your chicken half way through cooking
- Add your frozen broccoli to the skillet
