Smoked Sausage Tortellini Alfredo Meal

As a stay at home mom I need quick and easy recipes for that never ending question of “What’s for dinner?”

This recipe has only a few questions and takes no time from start to finish. Very little prep work is required, the hardest is slicing up the smoked sausage and green onions.

All these simple ingredients can be found at your local supermarket. And, a few of the ingredients you may already have in your pantry or refrigerator.

Can I eat leftover smoked sausage tortellini alfredo meal?  Yes, as long as the leftovers have been refrigerated.

How do I store leftover smoked sausage tortellini alfredo meal?  Place cooled leftovers into an airtight container, place plastic wrap or aluminum foil over the baking dish and place into the refrigerator for up to 3-4 days or up to 3 months in the freezer.

  1. Prepare cheese tortellini per package instructions, drain and set aside.
  2. Slice up the smoked sausages and green onions.
  3. Place a medium size skillet over medium high heat and add olive oil.
  4. Add the sliced smoked sausages, salt and black pepper to the skillet and saute until slightly brown.
  5. Also add to the skillet the cheese tortellini, spinach, alfredo sauce (1/4 cup water to clean out the jar) and half of the shredded parmesan cheese.
  6. Stir well.
  7. Place a lid on the skillet and simmer on low for approximately 3 minutes.
  8. Add remaining parmesan cheese and green onion to the top of the meal.
  9. Serve and enjoy!

  • 16oz alfredo sauce - any flavor
  • 1/4 cup water
  • 4 cups spinach
  • 5oz shredded parmesan cheese
  • green onions
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2-3 Tbsp olive oil

Instructions
