French Onion Chicken Rice Casserole

As a stay at home mom I LOVE easy and quick meal ideas. If a recipe has 10 or less items then I love it! This recipe is not only a dump and bake meal, it is a one pot dinner. And, you can’t beat washing less dishes and buying less ingredients.

The ingredients in this recipe are so easy to find at your local supermarket or you may even have these items in your pantry.

What are the ingredients in a chicken casserole? (scroll down for the full printable recipe card)

  • chicken – canned chicken, rotisserie chicken or any leftover cooked chicken can be used in this recipe.
  • shredded cheese – use your favorite kind of cheese: colby jack cheese, pepper jack cheese, mozzarella cheese, etc.
  • french onion dip – you can use any brand of dip or change it up and use a different kind of dip in this recipe.
  • cream of chicken soup
  • instant rice
  • chicken broth or water would work also
  • french fried onions – if you don’t have any of these, try using crushed up sour cream and onion potato chips!

Tips!

  • use any kind of shredded cheese
  • use a different kind of dip, for example: Ranch dip, queso dip, dill dip, jalapeno dip, etc. Check out your local grocery store for great ideas
  • replace french fried onions with sour cream and onion potato chips or any other kind of potato chips that you love
  • replace the chicken for one lb of cooked ground beef

How do I make a french onion chicken rice casserole? (scroll down for the full printable recipe card)

  1. Preheat oven to 350 degrees f.
  2. To a 9×9 baking dish add the cans of chicken (undrained) and shred the chicken with a fork, add the can of chicken soup, french onion dip, chicken broth and instant rice. Mix well.
  3. Add 1/2 of the shredded cheese to the baking dish.
  4. Add 1/2 of the french fried onions to the baking dish.
  5. Mix well.
  6. Bake for 30-40 minutes covered.
  7. Remove the casserole from the oven.
  8. Add the remaining shredded cheese and french fried onions to the top of the casserole.
  9. Bake an approximately 10 minutes (uncovered) or until the cheese is completely melted on top of the casserole.
  10. Serve and enjoy!

  • 2 cans (12.5oz each) chicken breast (undrained)
  • 1 can (10.5oz) cream of chicken soup
  • 1 cup french onion dip
  • 1 cup instant rice
  • 1/2 cup chicken broth
  • 2 cups shredded cheese
  • 2 cups french fried onions

Instructions

  1. Preheat oven to 350 degrees f.
  2. To a 9x9 baking dish add the cans of chicken (undrained) and shred the chicken with a fork, add the can of chicken soup, chicken broth, instant rice and french onion dip. Mix well.
  3. Add 1/2 of the shredded cheese to the baking dish.
  4. Add 1/2 of the french fried onions to the baking dish.
  5. Mix well.
  6. Bake for 45 minutes uncovered.
  7. Remove the casserole from the oven.
  8. Add the remaining shredded cheese and french fried onions to the top of the casserole.
  9. Bake an approximately 10 minutes or until the cheese is completely melted on top of the casserole.
  10. Serve and enjoy!
