As a stay at home and homeschooling mom, I need easy and quick recipes and this low carb casserole is it! One of the ingredients, which is my favorite keto staple, are low carb tortillas.
However, if you are on a Strict Ketogenic diet then you can replace these keto tortillas with cauliflower rice. I have made this recipe with both and either way it is a delicious meal.
Some chicken recipes can be bland and boring, but this cheesy chicken dish can become a family favorite! I have created many easy recipes, but this low carb green chile chicken casserole is quick and easy. The carb count is low at approximately 5 net carbs and less if you exchange the low carb tortillas with cauliflower rice.
The keto lifestyle is a great way to achieve weight loss, but can be boring when checking out all the nutritional information on packages. But, once you learn what foods are keto or not keto it will become second nature choosing the correct foods.
Can I have Mexican food on a low carb diet? Yes, you can enjoy Mexican flavors, but with a few substitutions for a low carb diet. For example, you will need to substitute the regular flour tortillas with keto or low carb tortillas. You can also place the toppings on a bed of lettuce for a low carb version too.
Can I have enchiladas on a low carb diet? Yes, you can have a low carb version of enchiladas. Traditional enchiladas are made with regular corn tortillas or flour tortillas. To make enchiladas low carb or keto, you will need to replace the regular flour tortillas with keto flour tortillas or low-carb tortillas.
How many net carbs are in enchiladas? This will depend on what type of flour tortillas are used. There will be extra carbs in the low carb enchiladas if the regular flour tortillas are not replaced with keto tortillas. The enchilada filling can also be added to a bed of lettuce for a low carb version too.

This is a great recipe to meal prep. Take any leftover chicken enchilada casserole and place in an airtight container or place plastic wrap or aluminum foil over the casserole dish. Then place leftovers into the refrigerator for up to 3-4 days or in the freezer for up to 3 months. Do not wrap the enchiladas in paper towels.
For meal prepping individual servings, just place 1-2 enchiladas into individual meal prep bowls and freeze. You can either have these leftovers for lunch or for those busy nights when you don’t know what to cook and you have Mexican food cravings.

This is an easy delicious dinner if you are on the keto diet. These green chile chicken enchiladas have a great flavor and they are even better the next day.
- Preheat oven 350 degrees
- Gather ingredients and supplies
- To make the chicken mixture that goes inside the enchiladas; take a large bowl and add the chicken breast, chopped green chiles, cream cheese and pepper jack cheese
- Optional – the chicken filling can be heated up in a sauce pan over medium-high heat. The cooking time will vary, just heat up until all the ingredients are melted.
- Mix well
- Spray the baking pan with a nonstick cooking spray
- Spoon the chicken mixture into each flour tortilla and roll up
- Place a single layer of rolled tortillas into the baking pan
- In a small bowl add the can of green enchilada sauce and sour cream.
- Mix well and pour over enchiladas
- Add a layer of cheese (feel free to add an extra cup of cheese!)
- Bake 25-30 minutes until cheese is completely melted and the ends of the tortillas are golden brown

- 8oz cream cheese
- 8oz pepper jack cheese
- 10oz can of green chiles enchilada sauce
- 8oz sour cream
- 8 low carb tortillas
- 2 cups shredded cheese

This can be an easy casserole and made into the ultimate comfort food recipe! Just change one of the basic steps and add either fresh cauliflower or a bag of frozen cauliflower that is located in the freezer department of your local supermarket.
Add all of the ingredients in this same recipe, but leave out the low carb tortillas. And place them all into an 8×8 baking dish and bake in the oven for 20 minutes.
