As a stay at home mom I love easy recipes that I can toss simple ingredients into a crockpot, leave it and let it cook. For some reason the “What’s for Dinner?” question is always question. Sometimes, wonder if that question will always be the hardest decision of the day, lol. “Crockpot Green Chiles Chicken Tacos”
If you use leftover cooked chicken, canned chicken or a rotisserie chicken then you can simply add all of the ingredients to a sauce pan, heat and simmer for approximately 5 minutes. Then, make your tacos and bake them in the oven.

- chicken breasts – cook some chicken breasts, use canned chicken breasts, rotisserie chicken or any leftover chicken
- diced tomatoes with green chiles – Rotel or any off brand will work
- green chiles
- taco seasoning packet – use a taco seasoning packet purchase from your local supermarket or use your own spices of chili powder, cumin, paprika, garlic powder and black pepper
- water
- shredded cheese – any kind of shredded cheese will work for these tacos
- corn tortillas or flour tortillas – either kind of tortillas will work, even keto tortillas
- nonstick cooking spray

These tacos can be keto-friendly is make the tacos with keto flour tortillas and not use regular tortillas or corn tortillas. You can also make your own keto tortilla chips.
What supplies do you need to make crockpot green chiles chicken tacos?
- crockpot
- baking sheet
- slotted spoon
- nonstick cooking spray

- Take your crockpot and add the chicken breasts, can of diced tomatoes with green chiles, can of green chiles, taco seasoning mix and water
- Cook on high for 4 hours or on low for 5-6, depending on how thick that your chicken breasts are
- Once chicken is fully cooked, take a fork and shred the chicken
- Preheat over to 350 degrees f.
- Spray baking sheet with nonstick cooking spray
- Spray the tortillas on each side, add shredded cheese and drained chicken mixture
- Fold over tortillas and bake until they the tortillas are brown and crispy
- Remove from oven and enjoy.

- 1 can (10oz) diced tomatoes with green chiles
- 1 can (4oz) green chiles
- 1/4 cup water
- 1 taco seasoning packet
- 8-10 corn tortillas or flour tortillas (or keto tortillas)
- 1-2 cups shredded cheese - any kind
Instructions
- Take your crockpot and add the chicken breasts, can of diced tomatoes with green chiles, can of green chiles, taco seasoning mix and water
