I have made this recipe for at least 32 years, because my crockpot that I am using was a wedding gift 32 years ago, LOL! And, so that is how long that I have been making this 3 ingredient cheese dip or queso dip.
You can change this recipe in so many ways and add a variety of dipped ingredients.
What is in cheese dip? (scroll down for printable recipe card)
- cheese – any kind of cheese can be used for this recipe
- diced tomatoes with green chilies – name brand or off brand for this ingredient works great
- browned breakfast sausage – any kind of cooked meat will work, for example hamburger meat, chicken, turkey or Italian sausage
- optional milk – if you like your cheese dip or queso dip less thick then you can always add a little milk to thin it, especially after it has cooled and been refrigerated.
- optional chopped jalapenos to add some extra heat
What other meats can I add to my cheese dip?
As long as you add your meat cooked, the options are endless from meats that you can find at your local grocery store, here are a few ideas:
- ground beef
- ground turkey
- ground chicken
- ground pork
- ground venison
- Italian sausage
- pepperoni
- diced ham or spam
- diced hot links
- diced jalapeno cheddar weiners
- pulled pork
- diced steak bites
- chopped grilled chicken breasts or chicken thighs
- drained cans of chicken breasts
Can I use off brands for the cheese or diced tomatoes & green chilies?
YES! I have always used off brands for this recipe and the cheese dip is perfectly delicious!
What types of cheese can be used in the cheese dip?
I chose a 2 lb box of Velveeta cheese, I also have used the off brand which tastes perfect too. The grocery store was out of the off brand on the day that I was making my cheese dip, lol. Here are some different cheeses that you can add:
- cheddar
- pepper jack cheese
- colby jack cheese
- mozzarella cheese
- gouda cheese
- parmesan cheese
- feta cheese
- queso blanco
- asiago
- cream cheese

- Gather your ingredients and crockpot
- Place a skillet over medium heat and cook your breakfast sausage
- Place the crumbled sausage onto some paper towels to absorb any extra grease
- Take a sharp knife and cut up the block of cheese into squares
- Add the cheese, diced tomatoes with green chilies and browned breakfast sausage to the crockpot
- Turn crockpot on low and cook for 3 hours, stirring occasionally or cook on high for 2 hours
- Serve with tortillas chips and enjoy!
How do I store leftover cheese dip?
Simply pour any cooled leftover cheese dip into an airtight container and place into the refrigerator for up to 3 days or you can always freeze leftover cheese dip for up to 3 months in the freezer.

Ingredients
- 2 lbs Velveeta cheese or any off brand cheese
- 1 can (10 oz) diced tomatoes & green chilies or Rotel
- 1 lb of browned breakfast sausage
- optional: 1/2 cup of milk if you want a thinner cheese dip
Instructions
- Gather your ingredients and crockpot
- Place a skillet over medium heat and cook your breakfast sausage
- Place the crumbled sausage onto some paper towels to absorb any extra grease
