Twice Baked Potatoes

As if potatoes couldn’t get any better just by themselves. I go and add cheese, bacon and onions to name a few items! OH MY YUM! Y’all have got to try these easy, easy twice baked potatoes!

  • potatoes – russet potatoes are best for twice baked potatoes, but any potato could be used
  • shredded cheese – any kind of shredded cheese is great, just pick your favorite cheese and add it to this recipe
  • butter
  • sour cream – regular sour cream or light sour cream can be used in this recipe
  • bacon – real cooked bacon or bacon bits will work for this recipe
  • green onions
  • salt
  • black pepper
  • garlic powder

How do I make twice baked potatoes? (scroll to the bottom for the full printable recipe card)

  1. Preheat oven to 350 degrees
  2. Wash potatoes and pat dry
  3. Place potatoes onto a baking sheet
  4. Bake potatoes for 1 – 1 1/2 hours or until done. Check potatoes by sticking a knife into them to see if they are soft inside
  5. Set potatoes aside to cool
  6. Once the potatoes are cool enough to handle, take a sharp knife and cut them in half
  7. Take a spoon and scoop the potato out of the potato skin
  8. Take a large mixing bowl and add the potato, melted butter, sour cream, 1/2 of the shredded cheese, bacon, 1/2 of the green onions, salt, black pepper and garlic powder
  9. With a fork combine and mash up the potatoes with all the other ingredients
  10. Spoon the mixture into the potato skins
  11. Top each potato with the remaining shredded cheese
  12. Bake until the cheese is melted, approximately 7-10 minutes
  13. Remove baking sheet from oven and sprinkle the remaining green onion over the potatoes
  14. Serve and enjoy!

Can I leave out any of the ingredients in my twice baked potatoes?

Yes, any of these ingredients can be left out or exchange them for an ingredient that you would prefer.

How do I store leftover twice baked potatoes?

Once your twice baked potatoes has completely cooled place them into an airtight container or into a Zip-loc bag and refrigerate for up to 3 days. To reheat these potatoes simply place them onto a plate and microwave for approximately 1 minute or until warm.
