This is a simple recipe that has easy to find ingredients that are at your local supermarket. And, any off brands will work perfectly too.

  • cream of chicken soup
  • green chili enchilada sauce
  • instant rice
  • shredded cheese

Is an enchilada casserole keto friendly?

Not if you use regular rice, however to make this chicken enchilada casserole keto friendly or low carb friendly, simple replace the regular rice with cauliflower rice. Cauliflower rice is in the freezer section at your local grocery store.
