As a stay at home mom I love easy meals that I can toss simple ingredients into a crockpot and let it cook. For some reason the “What’s for Dinner?” question is a never ending question. I sometimes wonder if that question will always be the hardest decision of the day, lol. “Crockpot Beef Tortilla Soup”
This is a simple recipe that has easy to find ingredients that are at your local supermarket. And, any off brands will work perfectly too.
Is this soup keto friendly?
Yes, it is a keto friendly or low carb friendly soup if you don not add any tortilla chips to the top of the soup. However, you can make your own keto tortilla chips and to the top of your soup along with shredded cheese and sour cream.

- browned ground beef – or any kind of browned ground meat, for example: chicken, turkey, sausage or venison
- beef broth
- taco seasoning
- Rotel or off brand Diced Tomatoes with Green Chilies
- cream cheese
- OPTIONAL chili beans – any kind of bean will work: chili beans, black beans or pinto beans
- OPTIONAL chopped onion – any kind of onion will work, yellow, white or red
What kind of meat is in a tortilla soup?
- ground beef
- ground turkey
- ground chicken
- ground sausage
- ground venison
What toppings can I add to my tortilla soup?
- shredded cheese
- tortilla chips or keto tortilla chips
- jalapeno peppers
- sour cream
- black olives
- salsa
- guacamole
Another great idea is to eat this soup with cornbread muffins or saltine crackers. YUM!
How do I make tortilla soup? (scroll down for the full printable recipe card)
- Place a skillet over medium high heat
- Add ground meat and cook until done
- Drain any excess grease off of the meat
- Add the browned meat, beef broth, taco seasoning, diced tomatoes with green chilies and cream cheese to your crockpot
- Cook on low for 5-6 hours or on high 3-4 hours
- Serve with shredded cheese and tortilla chips or any toppings that you like to add

Ingredients
- 2 lbs of browned ground beef or turkey
- 2 (32 oz) cartons of beef broth
- 2 packets of taco seasoning
- 2 cans (10 oz each) diced tomatoes with green chilies
- 1 8oz cream cheese
Instructions
- Place a skillet over medium high heat
- Add ground meat and cook until done
- Drain any excess grease off of the meat
- Add the browned meat, beef broth, taco seasoning, diced tomatoes with green chilies and cream cheese to your crockpot
- Cook on low for 5-6 hours or on high 3-4 hours

How do I store leftover soup?
Simply, add your cooled leftover soup to an airtight container and place into the refrigerator for up to 3 days. Or, you can freeze the soup for up to 3 months.
