Fried Okra Squash and Potatoes

Garden veggies are the best ever!

This is an AMAZING recipe!  The simple ingredient list makes it so easy to prepare and I love that I can find all the ingredients at my local supermarket or your garden.

This recipe has only a couple simple ingredients that can be purchased at your local grocery store. 

  • okra
  • yellow or green squash
  • potatoes
  • onion
  • corn meal
  • salt
  • black pepper
  • vegetable oil

How do I make Fried Okra Squash and Potatoes? (scroll down for the printable recipe card)

  1. Cut up the okra, squash, onion and potatoes (watch youtube video)
  2. Add the veggies to a large bowl and add the cornmeal, salt and black pepper. Mix well
  3. Take a large skillet and place it over medium high heat
  4. Add the vegetable oil to the pan, enough to cover the bottom of the pan
  5. Once the oil is hot, add the okra, squash, onion and potatoes to the skillet. Then, place a lid on top of the skillet
  6. Turn veggies when they begin to brown and remove lid once the potatoes are soft
  7. Cook until the veggies are brown and crispy
  8. Remove veggies from the oil and onto some paper towels
