Easy Breakfast Bowls

With busy mornings it is just too hard sometimes to find the time to cook a healthy breakfast. So, I decided to meal prep me some breakfast bowls and I LOVE them!

These breakfast bowls can be changed in so many ways!

Different Ideas!

  • change up the meat: sausage, ham, turkey, chicken, pepperoni, etc.
  • choose different veggies: onion, peppers, tomatoes, broccoli, etc.
  • add cottage cheese to increase the protein content
  • any kind of cheese can be added to these breakfast bowls
  • choose different spices or seasonings
  • add your breakfast bowl to a flour tortilla or corn tortilla and have a burrito
  • add salsa, picante sauce or taco sauce

This recipe has only a couple simple ingredients that can be purchased at your local grocery store.

  • eggs
  • breakfast sausage
  • bell peppers and onions
  • gravy mix
  • butter or olive oil

How do I make Easy Breakfast Bowls? (scroll down for the printable recipe card)

  1. Cook gravy mix per package instructions and set aside.
  2. Take a large skillet and place it over medium high heat.
  3. Add butter or olive to the skillet.
  4. Add bell peppers and onions. Saute them until they are done like you like them.
  5. In another skillet fry up the breakfast sausage until it is done. Spoon the cooked sausage onto some paper towels and set to the side.
  6. Break eggs into a bowl and whisk them.
  7. Add the eggs to the sauteed bell peppers and onions. Also, add the crumbled up cooked sausage.
  8. Cook eggs until they are done.
  9. Spoon egg mixture into meal prep bowls and spoon over some gravy (you will have gravy leftover, so freeze it for next time).
  10. Refrigerate for up to 5 days or freeze up to 3 months.
